Welcome welcome my delicious gluten-free shortbread cookie recipe!
This has been one of the most requested cookie recipes to make on the blog. And what better time than the holidays then to share this new dessert idea. I never really thought I would love shortbread cookies as much as I love these. But guys – these are absolutely insanely good. Drizzled with a little chocolate on top and they are amazing!!
The cookies have an extra crisp and crunch to them too just like shortbread cookies do. Dip them in some milk, enjoy them plain, sandwich them in some nut butter and enjoy my friends!
These are the ultimate cookie recipe to make for the holidays and serve for your family, santa or let’s be real – I make them even for myself obviously!

What ingredients you need to make these gluten-free shortbread cookies:
- Softened grass-fed butter – or sub vegan butter
- Honey or maples syrup – either works!
- Almond flour – I haven’t tested another sub yet
- Optional: vanilla extract and melted dark chocolate for drizzling
How to bake these healthier shortbread cookies:
- Cream together the butter and maple syrup (and extract if using)

Add in the almond flour and mix until smooth

Add the dough to the fridge for 30 minutes to chill a bit
- Preheat your oven to 350 degrees F and line a baking sheet with parchment paper

Roll out into large rectangle and shape in 12 cookies

Bake cookies for 11 minutes, watching closely to ensure they don’t burn
- Allow the cookies to cool for a few then drizzle chocolate on top and enjoy!

Notes
*Store leftovers in airtight container for 3 days or fridge for 5 days. This recipe also freezes really well!
