These Copycat Oatmeal Cream Pies are made with all gluten-free and vegan ingredients. These are inspired by “Little Debbie’s Oatmeal Creme Pies” and they’re so simple to make.
Is it crazy that I remember paying like 35 cents at the school cafeteria for the real deal Little Debbies Oatmeal Creme Pies?! I sound like an actual grandmother saying that. But it is true!
I was obsessed with these so much. My mom didn’t usually keep too many treats like these in the house since I would easily eat an entire box in a sitting. So instead I’d buy them at school and look forward to it every single time.
This is one of the most highly requested recipes ever on the blog. And I am so excited to finally share them with you guys. They are two oatmeal cookies with a hint of ginger and cinnamon, sandwiched between some vanilla frosting. These copycat oatmeal cream pie cookies are the ultimate dessert to make for any occasion and they also just so happen to be gluten-free and vegan.

What ingredients you need to make these vegan oatmeal cream pies:
- Creamy nut butter – I have used both peanut butter and almond butter! Tahini or sunflower seed butter can work too
- Coconut sugar
- Maple syrup – you can also use honey too
- Molasses
- Non-dairy milk
- Gluten-free rolled oats
- Almond flour
- Gluten-free oat flour
- Cinnamon, ground ginger
- Vanilla frosting of choice
How to make homemade gluten-free oatmeal cream pie cookies!
- Preheat the oven to 350F and line a large baking sheet with parchment paper
- Whisk together the almond butter, coconut sugar, maple syrup, molasses, and vanilla
- Stir in the oats, almond flour, gluten-free oat flour, baking powder salt, cinnamon, and ginger to form a thick cookie batter
- Scoop/roll into balls. Arrange and press lightly to flatten onto baking sheet
- Bake for 10-12 minutes
- Allow the cookies to cool then sandwich with frosting!

Ingredients
- 1/2 cup creamy nut butter (you can use peanut butter, almond butter or even tahini or sunflower seed butter)
- 1/4 cup coconut sugar
- 1/4 cup maple syrup
- 1 tablespoon molasses
- 2 tablespoons non-dairy milk
- 1 teaspoon vanilla extract
- 1 cup gluten-free rolled oats
- 1/2 cup almond flour
- 1/2 cup gluten-free oat flour
- 1 teaspoon baking powder
- 1/4 teaspoon sea salt
- 1 teaspoon cinnamon
- 1/4 teaspoon ground ginger
- Vanilla frosting of choice
Instructions

*Store leftovers in airtight container for 3 days or fridge for 5 days. Or you can freeze for 2 months

If freezing the cookies, how do you defrost them?

i personally just microwave or let them thaw out a bit in fridge overnight.
