I am OBSESSED with making pudding. Full on obsessed with having this in my fridge at all times. It is my go-to dessert right now, especially in summer when I want something cooler. And my 3 year old thinks this is life’s greatest thing to eat. He ate a batch of it in a day last time and continues to ask for pudding now for dessert.
But what I love about this recipe is how it is healthy AND easy to make. It is filled with a healthy fats, low in sugar compared to other desserts and only takes 5 minutes to prep then you let it chill in the fridge if you’d like. Or if you’re my son, he has no patience so he eats it straight from the blender.
I cannot wait to hear what you guys think about this – keep me posted!!
What ingredients you need to make avocado pudding:
- Bananas – I like them a little freckled here. Makes it sweet but not overly sweet or mushy!
- Avocado – similar consistency to prime guacamole avocado works well.
- Cacao powder – I don’t recommend cocoa powder here – cacao powder works best.
- Maple syrup or honey – either one works to sweet the pudding well
- Vanilla extract – a splash for flavor
- Optional toppings: cacao nibs, coconut flakes, crushed chocolate, berries
