You guys are in for a real delight with these cookies fam. Now don’t @ me for never having Crumbl cookies before, but the second we go to Florida this winter you better believe we are going. But from what I can tell and have heard from basically everyone is that they are amazing. And when I saw the countless requests come through to make a copycat version of their churro cookie, I just had to do it.
Plus any excuse to make snickerdoodle-type cookies as you know those are my favorite cookie besides a classic chocolate chip. And we even get fancy and use a frosting bag to make the swirl ha! J so did not think I could do it when we started, but between his perfectionist nature and craftiness filling the bag and my obsession with frosting and icing and drizzling all the things – we nailed it!

What ingredients you need to make copycat Crumbl churro cookies!
- Liquid coconut oil
- Non-dairy milk
- Coconut sugar
- Vanilla extract
- Blanched almond flour
- Coconut flour
- Cinnamon
- Baking soda
- Cream cheese (vegan or regular)
- Powdered sugar
- Cinnamon
How to make paleo-friendly and vegan churro cookies:
- Preheat oven to 350 degrees and line a baking sheet with parchment paper
- In a large bowl, mix together oil, milk, cookout sugar, vanilla extract until smooth
- Mix in the almond flour, coconut flour, cinnamon and baking soda until smooth
- Scoop about 2 tablespoons of dough into your hand and roll into a ball and place on baking sheet and repeat for remaining cookies
- In a small bowl, mix together the cinnamon sugar coating then dip each cookie in and roll around to coat
- Add cookies back to sheet and press down slightly so they aren’t in a perfect ball shape
- Bake in oven for 12 minutes then allow the cookies to cool on a cooling rack completely
- While the cookies cool, beat together frosting ingredients then top each cookie with frosting (I used on of these)

Ingredients
Churro cookies:
- 1/3 cup liquid coconut oil
- 1/3 cup non-dairy milk
- 1 teaspoon vanilla extract
- 1/3 cup coconut sugar

Notes
*I like to store these in the fridge since there is a cream cheese topping! I also freeze them for 2 or so months
