We are back with another Good Humor copycat ice cream bar baby!! And this one is my personal favorite of the 3 we have made so far.

You know I love all things peanut butter and chocolate and Reese’s. So you can imagine how hyped up I was when I made these. And I am shook over how delicious they are using just 4 ingredients!

I use 4 simple ingredients to make these: full-fat coconut milk, creamy peanut butter, maple syrup and crushed up cookies and peanuts!

What the original version is made with: Nonfat Milk, Reese’s Peanut Butter Sauce, Cake Crunch, Milk Chocolate Flavored Coating, Sugar, Corn Syrup, Coconut Oil, Less than 2% of: Whey, Caramel (for Color), Mono and Diglycerides, Guar Gum, Locust Bean Gum, Vitamin A Palmitate

What ingredients are in Frozen Reese’s Dessert Bars:

  • Full-fat coconut milk – you can use another milk alternative too but full-fat coconut is my go-to because it is extra creamy and thickens nicely.
  • Creamy peanut butter – creamier the better so it blends nicely with the milk.
  • Maple syrup – or sweet with honey if you prefer over maple syrup.
  • Gluten-free chocolate cookies – any double chocolate cookie works. It needs to be extra chocolatey!
  • Peanuts – crushed up unsalted roasted peanuts are my go-to here.

How to make copycat Good Humor Reese’s Ice Cream Bars:

  1. Blend together the milk, peanut butter and maple syrup
  2. Pour into ice pop molds (with popsicle sticks in!) and add to freezer to set overnight
  3. Add crushed cookies and peanuts to a shallow bowl or large plate then gently press down the ice pop into the mixture to fully coat (I like to let the ice cream thaw for a few minutes so sticks easier)
  4. Enjoy ice cream bars and store in freezer until ready to eat.

FAQs on making homemade Reese’s Ice Cream Bars:

  • Do these taste like the Good Humor Reese’s Bars? They are absolutely delicious and much healthier than the classic ones. Plus this version is lower in sugar, gluten-free, vegan and SO easy to make.
  • Can I use another nut butter if I am allergic to peanuts? Totally! Make these almond butter or cashew butter bars instead. Just sub another nut butter and the nuts you are using!
  • Do these taste extra creamy? Yes if you use full-fat coconut milk they will be creamy!! Another non-dairy milk works too but I do think the full-fat coconut makes it the creaminess.
