Taquitos are one of those foods we love to make for so many things. Dinner, appetizers, snacks, whenever the craving strikes!

These crispy taquitos are filled with cheeseburger meat and are incredibly flavorful and delicious. They are such a good finger-food to serve with some dips or enjoy as is. I find these sooo flavorful from the burger blend with the onions and condiments it cooks. And of course the cheese mixed right on it!

Typically taquitos are a Mexican-inspired dish with more Mexican-flavors. But these ones are mild and satisfy your cheeseburger cravings. They remind me of like a rolled up-cheeseburger of sorts. And these are so good if you have a gluten allergy too. My husband has celiac so using the almond flour tortillas are great for him!

These cheeseburger taquitos come together quickly and you only need a few ingredients to make them. My kids love them, my husband requests them and I love how they feed us all within one meal! Not to mention you can easily sneak in some veggies in the ground meat too. Add some chopped up carrots, zucchini or anything you’d like!

What ingredients you need to make these cheeseburger taquitos:

  • Ground beef – I usually use 85% lean as I love that blend but you can use another blend if you want. Or even try ground turkey or chicken!
  • Chopped white onion – I have used white onion or red onion, either one can work here
  • Sweet relish – I love the subtle flavor this adds but if you don’t have it, omit it! No worries.
  • Mustard – I use dijon or yellow mustard usually! Whichever we have on hand
  • Ketchup 
  • Shredded cheddar cheese – I use a block of cheddar and shred it but you can use pre-shredded if you want
  • Tortillas – I used these gluten-free ones but you can use any flour tortillas if you want

How to make crispy oven-baked taquitos:

  1. Preheat oven to 350 degrees F and line a baking sheet with parchment paper or oven-safe wired rack
  2. Heat a medium skillet over medium heat and add a splash of oil and onion and cook until onion is fragrant (about 3 to 5 minutes)
  3. Add in meat and break into pieces (I use this tool)
  4. Cook over medium heat until beef is no longer pink
  5. Remove from heat, drain any fat from the beef then stir in relish, mustard and ketchup and mix
  6. Mix in the cheese and combine until cheese is mostly melted and add salt and pepper to taste
  7. Warm tortillas in microwave and store in foil so they stay warm
  8. Spread about 3 tablespoons of the beef across the center of each tortilla and roll it up like a cigar
  9. Place sealed side down onto baking sheet and spray with oil or brush
  10. Place taquitos in oven and bake for 15 to 20 minutes or until crispy (I broiled for a few seconds to get them charred)
  11. Serve with desired sides and dipping sauces

FAQs and tips on making these cheeseburger taquitos:

  • Can I use corn tortillas? I like using flour (well gluten-free flour) tortillas for this because they are easier to roll and much softer. If you want to use corn tortillas you can, just make sure they are warm and pliable! 
  • Can I air fry these too? Absolutely! You can air fry them for about 5 minutes then check until they are ready.
  • My taquitos are breaking when I roll them, help! Make sure the tortillas are warmed up! If they are too cool, they will tare a bit.
  • Can I use another type of meat? Of course. Try ground turkey or ground chicken if you want instead.

Notes

*Store leftovers in fridge for 5 days. Reheat in oven or over skillet. Microwave would make them soft!
