  • Mustard – I use dijon or yellow mustard usually! Whichever we have on hand

  • Shredded cheddar cheese – I use a block of cheddar and shred it but you can use pre-shredded if you want

  1. Preheat oven to 350 degrees F and line a baking sheet with parchment paper or oven-safe wired rack
  2. Heat a medium skillet over medium heat and add a splash of oil and onion and cook until onion is fragrant (about 3 to 5 minutes)
  3. Add in meat and break into pieces (I use this tool)
  4. Cook over medium heat until beef is no longer pink
  5. Remove from heat, drain any fat from the beef then stir in relish, mustard and ketchup and mix
  6. Mix in the cheese and combine until cheese is mostly melted and add salt and pepper to taste
  7. Warm tortillas in microwave and store in foil so they stay warm
  8. Spread about 3 tablespoons of the beef across the center of each tortilla and roll it up like a cigar
  9. Place sealed side down onto baking sheet and spray with oil or brush
  10. Place taquitos in oven and bake for 15 to 20 minutes or until crispy (I broiled for a few seconds to get them charred)
  11. Serve with desired sides and dipping sauces
