OMG OMG OMG. I am so flipping excited to finally share these babies with you guys!!!!!! #rachLlittlebitesweek day THREE is here! So far we have made Copycat Little Bites Chocolate Chip Muffins + Copycat Mini Blueberry Muffin Bites and today we have banana nut.
Jord for one is shocked on how similar they turned out to the actual Little Bites banana walnut muffins we used to eat as kids. Someone needs to package these up and sell them so kids everywhere can bring them in their lunch boxes guys. Maybe that can be our next business endeavor lol!
I am obsessed not only with the taste of these banana walnut muffins but also the consistency. The texture is so perfectly moist and caky and fluffy and everything I want in a muffin. Oh – and the muffin top is perfectly golden on the sides and tastes buttery for some reason. Even though they are not buttery at all.. Crazy I know!
These are one of those recipes you are going to want to make over and over again. And likely hide from your friends unless you feel like sharing. Jord basically hid them all from us so Ez and I couldn’t eat them !!!

What ingredients you need to make these gluten-free Little Bites copycat muffins:
- Mashed banana (about 3 medium bananas, very ripe!)
- Maple syrup
- Liquid coconut oil
- Egg or 1 flax egg
- Vanilla extract
- Gluten-free oat flour (or spelt flour or all purpose flour works for not gf)
- Cinnamon
- Walnut pieces
How to bake mini banana walnut muffins:
- Preheat oven to 350 degrees and line a mini muffin tray with liners and/or grease well
- In a large bowl, mix together banana, syrup, oil, egg and vanilla until smooth
- Mix in flour, baking powder and cinnamon until fully combined
- Fold in walnuts then fill each muffin slot about 3/4 the way full
- Bake in oven for 15 minutes and enjoy!

- 1 cup mashed banana (about 3 medium bananas, very ripe!)
- 3/4 cup maple syrup
- 1/4 cup liquid coconut oil
- 1 egg or 1 flax egg
- 1 teaspoon vanilla extract
- 2 cups gluten-free oat flour (or spelt flour or all purpose flour works for not gf)
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- 1/2 cup walnut pieces
Instructions
- Preheat oven to 350 degrees and line a mini muffin tray with liners and/or grease well
- In a large bowl, mix together banana, syrup, oil, egg and vanilla until smooth
- Mix in flour, baking powder and cinnamon until fully combined
- Fold in walnuts then fill each muffin slot about 3/4 the way full

*Store in airtight container for 3 days or fridge for 5 days or freeze for 2 months

I just made these and they are super yummy! Perfect amount of sweetness without being too much. My apartment smelled so good while they were baking!
