To be honest, these S’mores Rice Krispie Treats are not the most beautiful thing I have ever photographed. BUT they are certainly one of the most tasty ones.
Those who know me well, know I am a sucker for all things s’mores.
You may have already noticed that in my cookbook, Just the Good Stuff. Its has homemade marshmallows and graham crackers that I love to use in these. I also shared those 6-ingredient Dark Chocolate S’mores Bars (gluten-free + nut-free) last year and they are one of the most popular summer recipes on the blog.
These crispy treats though are a new personal favorite. They combine two of the best desserts into one recipe.
S’mores Rice Krispie Treats made with all gluten-free ingredients and with a s’mores twist on the classic dessert.
You only need a few ingredients to whip these up. They are perfect to bring to a get together or BBQ or anything this summer. Or they are fun to make for you and yourself like I originally did 🙂
What ingredients you need:
- Brown rice crisp cereal
- Marshmallows – you can use store bought or make ones from my cookbook
- Butter – vegan butter or regular butter works!
- Graham crackers – you can use store bought or make ones from my cookbook
- Dark chocolate – I used these (code RACHL for free shipping)
Gluten-free S’mores Rice Krispie Treats
Gluten-free S’mores Rice Krispie Treats made with healthier ingredients like organic brown rice crisps, homemade graham crackers, homemade marshmallows, and dark chocolate.
Yield: 12-16 1x
Ingredients
- 4 tablespoons butter (or sub vegan butter)
- 3 cups of marshmallows (I love using my homemade ones from Just the Good Stuff that uses Vital Protein’s gelatin)
- 6 cups brown rice crisp cereal
- 1 cup crushed graham crackers (I love using my homemade ones from Just the Good Stuff
- 1/3 cup dark chocolate chips (code RACHL for free shipping)
Instructions
- In a large pot warm the butter over medium heat until melted
- Add marshmallows and continue to stir until it is melted
- Remove pot from heat then add in the cereal and crushed and mix well
- Fold in the dark chocolate chips then add mixture to 9×13 dish (line with parchment paper or grease well) and press down firmly
- Let the treats set for an hour or so then slice and enjoy!

*Store in airtight container for 5 days
**Healthy Peanut Butter Cup Rice Crispy Treats + Peanut Butter Cup Pumpkin Rice Crispy Treats (no marshmallows) are two great options with no marshmallows!
