This is the most simple blog post recipe I have ever shared.
But maitake mushrooms deserve all of the love. They are hands down my favorite to make and we love adding them to pizzas, in pasta and even on salads/various bowls. They look 100x more intimidating to make too than they actually are. These mushrooms are so simple and to make and once you try these – you will be hooked!
What do maitake mushrooms taste like?
- Maitake mushrooms have a more peppery and earthy taste compared to other mushrooms. They are also best cooked – I don’t recommend having these raw! Their flavor really comes out and you don’t need to add much besides some oil and salt and pepper.
How to roast maitake mushrooms:
- Preheat oven to 425 degrees
- Warm a cast iron skillet over medium heat
- Toss the mushrooms with oil and salt and pepper in a bowl
- Then add to skillet and turn off the heat
- Add the cast iron to your oven and cook for about 15 minutes and remove and enjoy!

- 1 package of maitake mushrooms, sliced
- 1/2 tablespoon avocado oil
- Sea salt and black pepper to taste

Its October, and now I’ve got some hens to try with this recipe. I like it for its simplicity and lack of other ingredients. First though, could you clarify something? Is the cast iron skillet warmed to medium heat over some heat source other than the oven? Why not just preheat the skillet in the oven?

Delicious and easy. I was searching for a recipe to fit the mushrooms I had. So Lion’s Mane and Oyster mushroom stems went into the hot skillet first, then the tops were chopped and added. All went into the oven for 15 minutes. I added the slender Chestnut mushrooms for the last 10 minutes. Mixed up some cooked linguini, chopped zucchini and dried tomatoes in olive oil and topped with mushrooms. I’ll use this recipe again.
