Banana bread is the #1 most popular recipe category here on the blog. I have been obsessed with all things banana bread for as long as I can remember.
Growing up my mom always had some in the house and it is forever my favorite. There is something so comforting and satisfying about having it. And I love how you can have it for breakfast, snack or dessert – anything!
This recipe though spices things up a bit. It makes one serving and takes a whole 2 minutes to cook. How insane is that? I know a handful of you guys live alone or don’t always want to make something that is a larger batch. Or maybe you have zero patience and want something tasty ASAP. This recipe is for you!
I have been making it for breakfast in the morning, after dinner for dessert – really anytime. It tastes so good with a scoop of coconut yogurt or ice cream on top too.
What ingredients you need to make gluten-free banana bread for one:
- Egg – I haven’t tried flax egg but it should work!
- Banana – I used a smaller banana. If you have larger one, use 3/4 or 1/2 of it
- Almond flour – you can likely use oat flour here too. I don’t recommend coconut flour for a sub.
- Creamy peanut butter – you can use any nut butter here but you know my love for creamy peanut butter!
- Dark chocolate chips (code RACHL for free shipping)
How to make this single serving banana bread:
- Mix together the egg, banana, almond flour and peanut butter in a microwave safe mug or mini dish (I used one of these)
- Mix in chocolate chips to the mug
- Add to microwave and cook for 2 minutes (the cake will rise slightly so please keep on eye on it!)
- Remove from microwave and drizzle more peanut butter on top if desired and add some ice cream or yogurt if using!
- Eat while warm 🙂

Ingredients
- 1 egg (I haven’t tried flax egg)
- 1 small banana
- 3 tablespoons almond flour (or use oat flour)
- 1 tablespoon creamy peanut butter
- Splash of vanilla extract
- 2 tablespoons dark chocolate chips (code RACHL for free shipping)
- Optional: yogurt or ice cream on top!

Best mug cake recipe I’ve ever had. And I’ve had a lot. The oat flour works really well. Accessible ingredients, healthy and surprisingly sweet! I added 1/4 teaspoon honey instead of the drizzled peanut butter topping!
