This is the dish to make for any vegetarians coming or kids or anyone who loves roasted veggies. Actually – this is a dish to make for everyone. Because who doesn’t love sweet potatoes, carrots, apples and apricots?! A little sweet and tarty and if you’re into a little spice – definitely be generous on the hot honey guys. It adds such a good kick that you will love.
Also I love that this dish is one you can prep ahead of the big turkey day. Or you can make this earlier in the week and have it with your meals all week long.

What’s in this roasted carrot and sweet potato dish:
- Sweet potatoes, washed and cubed
- Medium carrots, cut into thirds
- Granny smith apple, cut into cubes
- Shallots, chopped
- Garlic cloves, minced
- Dried apricots (or dates if you prefer)
- Broth of choice (we used veggie broth)
- Cinnamon
- Sea salt and black pepper to taste
- Hot honey to taste
How to make this sweet hot honey and veggie dish:
- Preheat oven to 400 degrees and take out a oval gratin baking dish (or something similar!)
- Add the sweet potatoes, carrots, apple, apricots, shallots and garlic to a large bowl
- Mix in in broth, cinnamon and salt and pepper until combined
- Add the mixture to the baking dish then drizzle desired amount of hot honey on top
- Cover with foil then bake in oven for 60 minutes and remove foil and cook another 15 minutes or so (or until veggies are cooked and softened!)
- Serve with desired mains!

Ingredients
- 3 medium sweet potatoes, washed, peeled and cubed
- 10–12 medium carrots, cut into thirds
- 1 granny smith apple, cut into cubes
- 2 shallots, chopped
- 2 garlic cloves, minced
- 1/2 cup dried apricots (or dates if you prefer)
- 1/2 cup broth of choice (we used chicken)
- Sea salt and black pepper to taste
- 1/2 teaspoon cinnamon
- Hot honey to taste
Instructions

Family hit! Made this for our Thanksgiving dinner and everyone RAVED. I did a mix of apricots and dates. After baking I kept warm in a crockpot and it turned out delicious!
