I love this homemade rice pilaf so much. For starters – it is so so easy to make. And it even sneaks in some vegetables and my kids devour it. Especially if you chop up the veggies really small, you can really really sneak it in guys.

You can really use any vegetables you have on hand, but my-go to combo is mushrooms, peas, onion and garlic. I love the flavors and how delicious it all turns out. And you can even use frozen veggies to keep things even simpler. This is one of those recipes that you can make basically at any time with pantry and freezer staples. And it is such a yummy way to spice things up a bit in the side dish department.

What ingredients are in this vegan rice pilaf:

  • Garlic clove, minced
  • White onion, chopped
  • Mushrooms, sliced (I used shiitake)
  • 1/2 cup frozen peas
  • Uncooked basmati rice
  • Broth of choice (I used vegetable broth)
  • Sea salt and black pepper to taste

How to make healthy homemade rice pilaf:

  1. Grease the bottom of a medium pot with oil (make sure the bottom is thinly covered)
  2. Turn stove on medium heat and add in the garlic and onion, mushrooms, peas and rice
  3. Toast over medium heat for 3-5 minutes, season with salt and pepper then add in the broth and bring to a low boil
  4. Cover and simmer for about 20 minutes or until rice is fully cooked
  5. Fluff the rice with a fork then serve with desired mains or eat as is
  6. I also love adding some fresh parm on top!
