But in the meantime.. let’s make these copycat Little Bites MINI MUFFINS! The ultimate lunch box snack that I am pretty sure we all love and ate growing up. I for one lived off the blueberry ones (which are in my cookbook). And these are my take on the party ones aka funfetti meets birthday cake meets these perfectly cakey and fluffy muffins.
Jord and I are still in awe over how good they turned out. I have a feeling you guys will LOVE them!
What ingredients you need to make mini birthday cake muffins:
- Krusteaz Buttermilk Pancake Mix
- Water
- Egg
- Melted butter, ghee or coconut oil
- Sprinkles of choice (I never measure !!)
How to make copycat Little Bites Party muffins:
- Preheat oven to 350 degrees and grease a mini muffin tray or line with liners
- In a large bowl, mix together water, egg and melted oil
- Mix in pancake mix then fold in sprinkles to batter
- Fill each muffin slot about 3/4 way and bake in oven for 22-25 minutes or until ready

Ingredients
- 2 1/2 cups Krusteaz Buttermilk Pancake Mix
- 1 1/3 cup water
- 1 egg
- 3 tablespoons melted butter, ghee or coconut oil
- Sprinkles of choice (I never measure !!)
Instructions
- Preheat oven to 350 degrees and grease a mini muffin tray or line with liners
- In a large bowl, mix together water, egg and melted oil
- Mix in pancake mix then fold in sprinkles to batter

*Store in airtight container for 5 days or freezer for 2 months

This recipe is so easy my 10 year old made it! She’s looking forward to having mini muffs for breakfast the rest of the week. We tested them when they were done and they were perfect with a dab of maple syrup. We had a little batter leftover and made 3 waffles with it in the mini dash!

Will a normal pancake mix work or is it necessary to use buttermilk pancake mix?
Buttermilk pancake mixes all have a lot of sugar, but normal mixes (not buttermilk) don’t have that much sugar. That is why I ask.
