But in the meantime.. let’s make these copycat Little Bites MINI MUFFINS! The ultimate lunch box snack that I am pretty sure we all love and ate growing up. I for one lived off the blueberry ones (which are in my cookbook). And these are my take on the party ones aka funfetti meets birthday cake meets these perfectly cakey and fluffy muffins.

Jord and I are still in awe over how good they turned out. I have a feeling you guys will LOVE them!

How to make copycat Little Bites Party muffins:

  1. Preheat oven to 350 degrees and grease a mini muffin tray or line with liners
  2. In a large bowl, mix together water, egg and melted oil
  3. Mix in pancake mix then fold in sprinkles to batter
  4. Fill each muffin slot about 3/4 way and bake in oven for 22-25 minutes or until ready
