Homemade copycat Little Bites BROWNIES everybody! These are a healthier twist on the childhood staple and they’re gluten-free and nut-free and so easy to make.
LITTLE BITES WEEK! I LOVE YA!! Day 4 and we have been quite busy over here friends.
For a quick recap, we made: Little Bites Chocolate Chip Muffins, Gluten-free Mini Banana Walnut Muffins, + Mini Blueberry Muffin Bites (gluten-free). And. don’t forget those Copycat Little Bites Party Cake Muffins from last month.
Heck YES baby!!! Let’s make some mini brownie bites. The dessert I craved 24/7 growing up. These cutie little brownies that hit the spot every single time.
And the best part? Instead of having a few in a bag – you can eat as many as you wish. This was my complaint about the classic ones in the bag – I need more you know?! Plus these are super easy to bake at home. And they are gluten-free, nut-free and can be dairy-free if you use vegan butter.
They are so fudgey and chocolatey and absolutely delicious. Plus they taste so good frozen OR fresh out of the oven. And the best part of making mini ones is that you don’t have to let them cool for as long. Huge perk when you have basically no patience like I do ha!
Okay now let’s hop to it guys!!!
What ingredients you need to make mini brownie bites:
- Unsalted butter or vegan butter
- Coconut sugar
- Vnilla extract
- Eggs
- Cacao powder
- Gluten-free oat flour or gf all-purpose flour
- Dark chocolate chips
How to bake copycat Little Bites Brownies:
- Preheat oven to 350 degrees and line/grease mini muffin tray
- Whisk together butter, sugar, vanilla and eggs together
- Add in cacao powder, flour and baking powder and mix until smooth (it will be thick!)
- Fold in chocolate chips then fill each muffin slot about 3/4 way full and smooth out the tops
- Bake in oven for 15-18 minutes (I stick a toothpick in to see if ready)
- Remove from tray and enjoy!

- Total Time: 20 mins
Yield: About 20 mini brownies 1x
Ingredients
- 10 tablespoons unsalted butter or vegan butter, softened
- 1 1/4 cup coconut sugar
- 2 teaspoons vanilla extract
- 2 eggs
- 1/2 cup gluten-free oat flour or gf all-purpose flour
- 3/4 cup cacao powder
- 1/2 teaspoon baking powder
- 1/2 cup dark chocolate chips
Instructions

SO good! I wasn’t sure what to expect but these truly brought me back to my childhood days when Little Bites were a premium snack! These are so good and feel so much better than actual Little Bites since they’re homemade and not filled with preservatives.
