So when I first found out about the “viral” Jennifer Aniston salad, I was like “how did Jen not tell me?!” We have been following each other on Instagram now for a couple years and even though we aren’t technically bffs, I do pretend that we are friends. And considering she knows who my kids are and parts of my life by following me and seeing my content, some may say we are besties, right?
This salad exceeded any expectations I had. It turned out so good and even my 15 month old loved it. We have been making this every week now for a bit and it deserves it’s own spot on the blog too.

What ingredients I use to make the Jennifer Aniston Salad:
- Quinoa – the traditional recipe calls for bulgur wheat but I used quinoa for a gluten-free option.
- Red onion – I use a little here as red onion isn’t my favorite. I want to add pickled onions next time.
- Parsley – this salad calls for a lot of parsley chopped. If you aren’t a huge fan, omit it.
- Mint – I was a little apprehensive on this but so happy I added it in the salad.
- Pistachios – I always add pistachios into my fall salads with Brussels sprouts and the addition here is SO delicious. Great crunch and texture it adds.
- Cucumber – perfect addition to this salad and most salads really.
- Crumbled feta cheese – feta cheese is my favorite in salads. Plus it gives it that Mediterranean feel.
- Chickpeas – this is the main source of protein in the salad.
- Olive oil, lemon and sea salt and pepper to taste
How to make the viral salad from the FRIENDS’ set:
- Cook quinoa according to instructions and set aside to cool
- Once quinoa is cooled, add all of the ingredients to a large bowl and mix well
- Drizzle with olive oil, lemon and add salt and pepper and enjoy!

Ingredients
- 1 cup quinoa, uncooked
- 1/2 cup red onion, chopped
- 1/2 cup parsley, chopped
- 1/3 cup mint, chopped
- 1/2 cup chickpeas, rinsed
- 1/3 cup pistachios, unshelled
- 1/2 cup cucumber, chopped
- 1/2 cup crumbled feta cheese
- Olive oil, lemon and sea salt and pepper to taste
Instructions
- Cook quinoa according to instructions and set aside to cool
