APPLE WEEK DAY #3!!!! Welcome back to #rachLappleweek fam. And let me just say – this apple cobbler is so going to be a fan favorite in addition to that Loaded Hot Honey, Apple and Brie Pizza! and OMG Homemade Apple Fritters!
I am obsessed with apple desserts. And this vegan apple cobbler is my way of making a pie type thing except 100x easier lol. Making a homemade pie sounds labor intensive and daunting if we are being honest. So I decided to whip up cobbler instead.
And incase you’re wondering what the beep cobbler is, we kicked off our love affair with The Best Vegan Gluten-free Peach Cobbler back during peach week. Since then the infatuation is real. Imagine delicious warmed cinnamon sugar apples topped with a dreamy biscuit kind of topping that tastes just like pie crust. The dough itself is just pure insanity.
This is one of those recipes you will want to bust out your favorite ice cream to have on top. And you can really use any apple you want. I used granny smith because my mom asked me too ha!

What ingredients you need to make apple cobbler:
- Apples, peeled and sliced
- Coconut sugar (I used this one!)
- Cinnamon
- Gluten-free oat flour
- Finely chopped nuts (walnuts or pecans are best)
- Baking powder
- Melted coconut oil (or use vegan or reg butter)
- Non-dairy milk
- Vanilla extract
How to make vegan apple cobbler:
- Preheat the oven to 400 degrees
- In a 10-12 inch baking skillet, toss the apples, sugar and cinnamon together and mix well
- Bake in oven for 15-18 minutes
- While the apples bake, make the cobbler ingredients by mixing together flour, sugar, nuts, baking powder and cinnamon then add in oil, milk and vanilla until dough is formed
- Spread the cobbler dough across the skillet and bake for 20-22 minutes or until golden
- Serve with your favorite ice cream and enjoy!

Apple base:
- 5 medium apples, peeled and sliced
- 1/2 cup coconut sugar (I used this one!)
- 1/2 teaspoon cinnamon
Cobbler topping:
- 1 1/4 cup gluten-free oat flour
- 1/2 cup coconut sugar (I used this one!)
- 1/2 cup finely chopped nuts (walnuts or pecans are best)
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 6 tablespoons melted coconut oil (or use vegan or reg butter)
- 1/2 cup non-dairy milk
- 1 teaspoon vanilla extract
Instructions

Notes
*Store in fridge for 5 days and reheat in oven or microwave. Or you can eat cold like me!
