They are SO incredibly flavorful and easy to make for a side dish, appetizer or whenever the craving for these strikes. 

I made these fritters from my friend Yumna’s cookbook debut, The Feel Good Foodie Cookbook! Yumna’s recipes are absolutely amazing. They are filled with Mediterranean flavors and she makes it easy for anyone to cook at home. The recipes are made with feel-good ingredients, many with under 10 ingredients and her dishes all the tips and advice in the kitchen. 

So many of Yumna’s recipes in the book spoke to me like the White Zucchini Pizza with Garlicky Labneh, Seven Spice Roast Chicken and her Tahini-glazed Cauliflower. But when it was time to pick something out to cook, I had to try these fritters. And let me tell you – they did not disappoint.

I had a handful of the ingredients on hand to make these and I also added in some kale since I had extra in the fridge. If you love all things feta cheese, you will love these. The fritters are crispy, ready in 20 minutes and you dip them in a delicious dill lebnah sauce that is too good not to try.

What ingredients you need to make these quinoa feta fritters:

  • Large eggs – I haven’t tried flax eggs or a sub in these
  • Quinoa – I haven’t tried a sub here. I don’t recommend rice or another grain incase it doesn’t work
  • Crumbled feta cheese – you could use goat cheese too if you prefer or don’t have feta cheese
  • Fresh parsley – I used dried parsley instead of fresh parsley 
  • Tuscan kale – I added this in for extra veggies
  • Garlic cloves – freshly minced garlic cloves work or use garlic powder if you prefer
  • Red onion – I actually use sweet white onion for this because it’s all I had
  • Gluten-free breadcrumbs or almond flour – either one can work here. Just look at ratios be
  • Avocado oil – or you can use olive oil if you prefer
  • Lemon – fresh lemon juice in the dip is great
  • Labneh – you could do yogurt if you don’t have labneh too
  • Dried dill or fresh dill – added for flavor here

How to make these quinoa feta fritters:

  1. In a large bowl combine the eggs, quinoa, feta cheese, parsley, tuscan kale, garlic cloves, red onion, breadcrumbs and sea salt and black pepper until combined
  2. Using a 1/3 measuring cup scoop out the batter and form into patties by packing firmly into measuring cup and add to plate while you form the rest
  3. Warm a large skillet with avocado oil over medium-high heat
  4. Add the fritters to the skillet and cook over medium heat for 3 to 4 minutes
  5. Gently flip then cook again for 3 to 4 minutes or until golden and ready
  6. While the fritters cook, mix together the dip ingredients
  7. Serve fritters with dip and enjoy!

FAQs and tips on making quinoa feta fritters:

  • Can I use uncooked quinoa? No that wouldn’t work! The quinoa needs to be fully cooked. If you are preparing it before making these, add to fridge after it cooks so it cools down a bit.
  • What are some modifications you recommend? You can definitely add any other spices or herbs you want. I also added in some chopped up kale for extra veggies since I had some on hand. Other than that, I haven’t tried another sub.
  • What is the best way to store these fritters? In the fridge for 5 days. You could also likely freeze them too if you want. I don’t recommend freezing the dipping sauce though.
  • Can I bake these in the oven? I don’t see why not. I personally haven’t tried that but  if you grease the sheet pan and drizzle oil on top it should work. I think it would be crispier though when pan frying.

Crispy quinoa feta fritters:

  • 2 large eggs
  • 1 cup cooked quinoa
  • 1/2 cup crumbled feta cheese
  • 1/3 fresh parsley, chopped
  • 1/2 cup tuscan kale, chopped (I added this in for extra veggies, it’s optional)
  • 2 garlic cloves, minced
  • 1/2 cup red onion, chopped
  • 1/2 cup gluten-free breadcrumbs or 3/4 cup almond flour
  • Sea salt and black pepper to taste
  • 2 tablespoons avocado oil

Labneh Dill Dip:

  • 1 lemon
  • 1/2 cup labneh
  • 1 teaspoon dried dill or fresh dill
  • Sea salt and black pepper

Instructions

  1. In a large bowl combine the eggs, quinoa, feta cheese, parsley, tuscan kale, garlic cloves, red onion, breadcrumbs and sea salt and black pepper until combined
