These Peanut Butter Cup Granola Cups are a delicious healthy snack made with all gluten-free and vegan ingredients. Such an easy no-bake snack great for kids, adults and they are great to keep in the freezer.

When it comes to snacks – I am all about a sweet and salty snack combo. These granola cups are by far one of my favorites. Plus you know I love all things granola too. It is one of the foods I eat every single day no matter what time of the day.

There is really nothing better than chocolate peanut butter either so these are the ultimate flavor combo. And they are crunchy, have a smooth peanut butter chocolate topping and a little more crunch from granola on top.

These cups are great to meal prep too and they stay good in the freezer for a month. I love keeping them on hand for a healthy but sweet snack and it’s a great one for kids too. My boys love eating these. What kid doesn’t love a dessert snack though?

I love that granola cups are also really customizable and you can make them using other ingredients you have on hand. If peanut butter isn’t your thing, use another nut or seed butter. Or another type of chocolate or crunchy topping on top.

What ingredients you need to make these Peanut Butter Cup Granola Cups:

  • Gluten-free rolled oats – use regular rolled oats if not gluten-free
  • Almond flour – or use 1/4 cup gluten-free oat flour or all purpose flour
  • Creamy peanut butter – the creamier the better. If the PB is too thick or crunchy, it won’t work as well
  • Maple syrup – or use honey if you prefer too
  • Dark chocolate chips – or use milk chocolate or semi-sweet if you want
  • Granola – I love adding granola on top for an extra crunch!

How to make these gluten-free granola cups:

  1. Take out silicone muffin tray and set aside 
  2. In a large bowl mix oats, flour, peanut butter and maple syrup together well
  3. Add into muffin tray and press down firmly to form the cups
  4. Melt chocolate and peanut butter together and pour on top of the granola cups then sprinkle granola across
  5. Add to fridge or freezer to set completely 
  6. Gently remove from muffin tray and enjoy

FAQs and tips on making these peanut butter granola cups:

  1. I can’t eat peanut butter, what can I do? These can be made with almond butter, tahini or a sunflower seed butter too. Just make sure they are creamy and smooth like peanut butter and you’re golden.
  2. Can I use another type of oat? Rolled oats work best consistency wise for these. I haven’t tried steel cut oats but I do think quick oats would work well too. Rolled oats do work wonderfully and allow the cups to form well.
  3. Can I use another muffin tin? Silicone muffin tray is preferred. Makes it 100% easier to remove and pop out the cups once they set.
  4. Are these granola cups good on the go? Absolutely! They’re fine to take on the go for a few hours!
