I made this a couple of weeks ago for the first time. Usually I am better about making this in advanced then sharing a few weeks later. But this quarantine has me rushing myself to keep sharing content with you guys.
Especially cookie content as that is the number one type of recipe anyone is craving these days.
I was first going to make my Chocolate Chip Walnut Cookies (gluten-free) but wanted to switch things up a bit. I was craving something a bit more chocolatey and rich. Not brownie-rich as I knew the cookie craving was surpassing any other.
When I shared those walnut cookies, they nearly broke my blog (but really – it crashed). And I used those as the inspiration for these based off of your feedback and also that chocolatey craving I had.
I switch things up a bit and use coconut oil instead of butter, which works perfectly. It does make the cookies a bit crispier, but in the best way. They also are ready in just 10 minutes and they don’t require an chill time in the fridge (I rarely have patience for fridge chill time!).
These Double Chocolate Chip Cookies have a crispy crunchy outside and a soft chewy chocolatey center. They are absolutely too die for and made with all gluten-free and dairy-free ingredients.
What ingredients we’ll need to bake these:
- Solidified coconut oil – you can also use 1 stick of butter (1/2 cup)
- Pasture-raised egg – or sub flax egg
- Coconut sugar – I love using this grainier sugar in this recipe. Please don’t sub honey or maple syrup but cane sugar can work too or mix of brown and cane sugar
- Gluten-free oat flour – or regular oat flour or even spelt flour works.
- Almond meal or almond flour – both will work will in these.
- Dark chocolate chips – I always use these (code RACHL for free shipping)

Ingredients
- 1/2 cup solidified coconut oil
- 1 pasture-raised egg or flax egg
- 1 cup coconut sugar (or sub cane sugar and/or mix of both cane and brown sugars)
- 1/2 teaspoon vanilla extract
- 1 1/4 cup almond meal or flour
- 1 cup gluten-free oat flour (can sub spelt flour too!)
- 3 tablespoons cacao powder
- 1 teaspoon baking powder
- 1/2 cup dark chocolate chips (code RACHL for free shipping)
Instructions
- Preheat oven to 350 degrees and line a baking sheet with parchment paper
- Fully melt the coconut oil in a saucepan or in microwave
- In a large bowl, cream together the melted coconut oil (once cooled), egg, coconut sugar and vanilla extract
- Mix in the almond meal, flour and baking powder until smooth
- Fold in dark chocolate chips
- Scoop about 2 tablespoons of dough onto the baking sheet and repeat for remaining dough (leave about 1-2 inches between each cookie)
- Sprinkle with some sea salt if desired then bake in oven for 10-12 minutes
- Allow the cookies to cool for a few and enjoy!

hi sofia!! was baking powder added in? sometimes it’ll vary based off the oven, the brand of flour and also the consistency of the coconut oil

So good ! Did everything as instructed but I substituted cane sugar and used a chia egg. Dough looked a bit dry so I was a bit nervous but the cookies came out delicious !

I made these and took them to a party where they served them along side some store bought versions (coincidentally). These went down in a second, adults and children devoured them, and everyone raved about them. I made them a third of the size in order to make more and they were absolutely delicious. They are quite sweet though (even for this sweet tooth) so I wondered if it’s possible to cut the sugar down and still have the same result? Thanks Rachel!
