The easiest meal to whip up, this No-Mayo Chicken Waldorf Salad! Made with all healthy ingredients and ready in 5 minutes.

This week we are staying with friends down at the Jersey shore. We are so excited to be out of the city for a bit and give Ezra some space to run around and swim and just be outside.

Selfishly it is also just nice to be able to sit outside and work. Which is what I am doing right now as Ezra naps. Weekend naps versus weekday nights are so different when we are away with no Ezra care. Now the second he goes now, I try to get my solid 2-3 hours of laptop work done. It is impossible to do much while he is awake and playing. Besides feeding/cooking with him since he loves food so much.

Now let’s chat a bit about this insanely good Waldorf Chicken Salad. I threw this together as a list minute meal and it was SO delicious.

We have been barbecuing every single night, which is also a treat. I have been repurposing the leftovers for lunch during the day and that is exactly how this chicken salad came to life. All thanks to the leftover grilled chicken from a few nights ago when we first arrived.

What I love about this chicken salad is how versatile it is. You can really use whatever you have on hand and toss it in – you guys know how I roll!

The ingredients are simple and healthy and this gluten-free chicken salad takes 5 minutes to whip up.

What you need to make this:

  • Chicken breasts – cooked and leftover from whenever. I love using leftover roasted chicken from my cookbook, JTGS or you can use leftover grilled chicken.
  • Grapes – red, green, whatever! I use this for a little sweet/tarty taste to the salad. Most traditional ones have green apple too, so feel free to add that in as well if you have on hand.
  • Plain yogurt – this is instead of the mayo. We didn’t have any on hand to use, but since I have been on a huge yogurt kick lately – I just used some of that! Turned out perfectly. But you can also sub mayo as well.
  • Dijon mustard – my secret weapon! It adds the best taste to the salad.
  • Crushed walnuts – or use almonds, pecans, anything! Just for that extra crunch into the mix.

What I also love about this salad is that there really aren’t many steps to it. Grab a bowl and the ingredients – mash it all up and you are set!

Yield: Serves 1-2 1x

Ingredients

  • 2 cups cooked chicken, shredded (I used leftover grilled chicken but roasted works too)
  • 2 tablespoons plain yogurt
  • 2 teaspoons dijon mustard
  • 1/3 cup grapes, sliced in halves
  • 1/3 cup walnuts, chopped
  • Sea salt + black pepper to taste

Instructions

  1. In a medium bowl, add the chicken, yogurt, dijon, grapes, walnuts and s+p and mix well
  2. Mash a bit with a fork so it gets “shredded” a bit and turns into more of a salad consistency
  3. Serve over a salad or on your favorite bread or with crackers!
