What is it about banana pudding that is truly SO good?!
I am obsessed with all things banana as you guys know (I mean.. hello 90% of my blog recipes). But when it come to a banana pudding, I haven’t dabbled too much in this category. And to be honest – that’s because a classic banana pudding is incomparable in my opinion. But it is also one of the most highly requested recipes to date.
So here we are fam. Making a paleo AND vegan banana pudding. It is one of those recipes you can make for breakfast, dessert, snack, anything! Ezzie has been loving it for breakfast in the morning. And I love it for an afternoon snack. The crunch of granola is 100% not optional to me. I love a good crunch in my puddings. And if you are feeling extra fancy, you can also add some whipped topping and sliced bananas!
What ingredients you need to make paleo banana pudding:
- Bananas, not overly ripe!
- Tapioca flour or arrowroot flour (I don’t recommend a sub)
- Full-fat coconut milk
- Vanilla extract
- Coconut sugar or maple syrup
- Topping ideas: granola or sliced banana
How to make homemade banana pudding:
- Add the banana, flour, milk, vanilla and coconut sugar to blender
- Blend until smooth and transfer to a sauce pan and bring to a low boil
- Lower and simmer on low for about 10 minutes, stirring frequently to allow the mixture to thicken
- Once thick, add pudding to a large tupperware and set in fridge to cool until ready to eat
- Add desired toppings and enjoy!

I was a little skeptical about this recipe since my southern husband is a tough banana pudding critic. He loved it! We ate it for breakfast with bananas and granola which took it over the top!
