OH MY GOSH! These bacon egg and cheese roll up’s are everything. And I know no one will believe me but this recipe was 10000% my idea. Not Jord’s as I know that is what you are thinking. Even my brother and mom assumed J!

But what do ya know..the chocolate chip cookie obsessed girl was craving some bacon, egg and cheese at 6am (we can thank Brody for that wake up time!). And for #rachLbreakfast week – I had to give you something savory too. So far we have made 5-minute Creamy Chia Seed Pudding and also my Classic Overnight Oats: The Breakfast Staple.

Now I’m not too familiar with the whole “keto” thing but I am pretty sure this recipe also happens to be keto as well if anyone is looking for something keto and tasty and just flipping delicious. These kind of remind me of bacon wrapped scallops or dates kind of concept. Except it’s your new favorite breakfast or savory snack edition.

I hope you guys love this recipe as much as we do. They really turned out SO good and worth my hands getting all greasy to make them – ha!

Bacon, Egg + Cheese Roll Ups made with only 3 ingredients. These are such a delicious and easy breakfast or brunch recipe to serve.

What ingredients you need to make these:

  • Uncooked bacon
  • Eggs
  • Slices cheddar cheese, cutting each slice into 3 smaller slices or use shredded cheese

How to make these bacon, egg and cheese roll up’s:

  1. Preheat oven to 400 degrees and line a baking sheet with parchment paper and foil and if you have one, a rack to put on top (see photos above)
  2. Warm a skillet with oil or butter and whisk eggs together in small bowl (I also season with black pepper here)
  3. Scramble the eggs and remove from heat (we did slightly undercooked since it is going in the oven)
  4. Lay out 2 slices of bacon onto the sheet next to each other, slightly overlapping and add 3 pieces of the cheese to the bacon (see video tutorial above)
  5. Add some of the eggs on top of the cheese and gently roll up the bacon and place onto the baking sheet (don’t overstuff with eggs or they won’t roll as well)
  6. Repeat for the rest of the bacon and bake in oven for 22-25 minutes or so then broil for a minute if you’d like to get them crispy
  7. Serve while warm and enjoy!

*Store leftovers in fridge for 3 days and reheat in oven or microwave (I prefer oven)
