Vegan Oven-Baked Falafel Burgers made with all gluten-free and vegan ingredients and they are ready in just 20 minutes. These pair perfectly in your go-to mediterranean favorites like hummus, olives, anything!
Confession: I LIVE for falafels. I get them everywhere we go and there is truly nothing better then some fried chickpeas filled with all the spices and flavors and things. I always add them into my greek bowls and love ordering the falafel sandwiches when I see one. Ezra has also grown to love falafel as much as I do too.
I have a bunch of falafel recipes here on the blog but these are by far my easiest and they are so flipping good. I love making them into the 4 larger patties and you can also freeze them to keep on hand for easy access. They freeze super well and I usually defrost them in the fridge the night before then crispy them up on the stove when eating.
You can add pretty much anything you want to these and serve them however you are craving.
Add them to your favorite bun with a smear of hummus and some toppings. Or you can add them to a bowl like this one with pita chips, greens and all your fave greek foods.
No matter which way you eat it – I hope you enjoy it!
What ingredients you need to make these vegan falafel burgers:
- Organic leafy greens
- Cloves garlic
- Creamy tahini
- Parsley leaves
- Lemon
- Sea salt and black pepper
- Cumin
- Organic chickpeas – drained and rinsed! I also look for no salt added
- Raw nuts or seeds – walnuts, pecans, almonds, anything!)
How to make these insanely good falafel burger bowls:
- Preheat oven to 350 degrees and line a baking sheet with parchment paper
- Add the falafel ingredients to food processor and pulse until a thick dough forms (shouldn’t take too long and you may want some chickpea chunks!)
- Form into 4 patties and add to baking sheet
- Bake in oven for 10 minutes then gently flip and bake for another 8-10 minutes
- Serve anyway you’d like! I served mine with more greens, olives, hummus, pita chips (I used these – not GF but yummy!), feta cheese and cucumbers! Oh and my dairy-free tzatziki from my cookbook.

Ingredients
- 1 cup organic leafy greens (I used Power Greens from Earthbound Farms)
- 3 large cloves garlic
- Large handful parsley leaves
- 1 large lemon
- Sea salt and black pepper to taste
- 1 1/4 teaspoon cumin
- 1 15-ounce can organic chickpeas (drained and rinsed – they are too wet the falafel won’t stay well)
- 2 tablespoons creamy tahini
- 1/3 cup raw nuts or seeds (walnuts, pecans, almonds, anything!)

the chickpeas may have been too wet! if the batter ever looks too wet – add more flour!
