Zesty Chopped Salad “Nachos” made with gluten-free and dairy-free ingredients for an easy and healthy twist on nachos!
There was a time in my life when the classic beef nachos were my go-to appetizer when I went out for dinner. Now don’t get me wrong, they still taste amazing but it’s not something I eat too often.
I’m always looking for healthier alternatives and recipes on the classic foods and these Zesty Chopped Salad “Nachos” are my latest favorite recipe. I love how they combine a delicious chopped salad with crunchy chips and they are super refreshing, a great appetizer to serve for friends and they are great to prep in the summer since no oven is needed.
But let’s get to the part of the recipe I am the most excited about..
The dressing! I use Primal Kitchen Caesar Dressing in the salad to put on top of the nachos and it is my absolute favorite healthier caesar. It is crazy flavorful and it has no gluten, dairy, refined sugar and it is paleo (all of their dressings and products are amazing TBH). Plus now the Green Goddess, Caesar, Balsamic and Ranch dressings are all in Wegman’s now! How epic is that? It makes me the happiest human to see my favorite products getting into more and more retailers throughout the country.
Primal Kitchen also makes a variety of other products I love like their avocado oil, whole30 avocado oil mayo or you can get a sampler pack to try a few things! Their products are whole30-friendly, paleo and they never use refined sugars or canola or soy oil. Aka my dream of a brand. I can trust what they make and they don’t make me feel like I’m sacrificing flavor to eat healthier.

Zesty Chopped Salad “Nachos” (gluten + dairy-free)
Zesty Chopped Salad “Nachos” made with gluten-free and dairy-free ingredients for an easy and healthy twist on nachos!

Yield: 3-4 1x
Ingredients
- 2 cups tortilla chips of choice (I used these grain-free ones)
- 2 cups organic romaine lettuce, chopped
- 1 avocado, sliced
- 1/4 cup kalamata olives, chopped
- 1 small organic cucumber, chopped
- 1/4 cup organic carrots, chopped
- 1/3 cup non-dairy cheese of choice (or feta yummy in this)
- 2 tablespoons hemp seeds
- 1/4 cup Primal Kitchen Caesar Dressing
Instructions
- Spread the nachos on a large plate or tray of choice
- In a large bowl, mix together the salad ingredients then toss in the dressing and mix well
- Add the salad on top of the chips and enjoy!
Notes
These taste best day of. I do not recommend making ahead of time or the salad will be soggy!
