After I made my Frozen S’mores, one of my friends told me she makes these “ice cream sandwiches” using similar ingredients. And when she told me how simple they were, I had to give them a whirl.

I have made some recipes similar to these like my S’mores on a Stick too but never an ice cream sandwich kind of vibe before. And let me tell you – these turned out so so good! They are incredibly easy to make too. You only need 3 ingredients to make them: graham crackers, cool whip and chocolate chips. They’re an easy dessert to whip up especially for summer time barbecues and get togethers.

These cool whip sandwiches are great for kids, adults and they’re so versatile. I like to mix in chocolate chips to the cool whip. But you can also do sprinkles, coconut flakes, peanut butter or even some oreo kind of cookies.

You will be shocked over how delicious they are! I was kind of hesitant at first with the cool whip freezing well with the graham crackers, but these exceeded my expectations. I am so happy my friend Lauren told me about them. They are a new staple over here and I cannot wait for you to try them too.

What ingredients you need to make these cool whip ice cream sandwiches:

  • Cool whip or use a dairy free-option or whipped topping – really anything like this can work. I usually use a dairy-free one. They’re sold in the freezer section!
  • Chocolate chips or chopped up chocolate bar – I like to use dark chocolate chips to the cool whip
  • Gluten-free graham crackers – if you’re not gluten-fee, use any graham crackers you’d like

How to make cool whip ice cream sandwiches:

  1. Allow the cool whip to sit at room temperature for 15 to 20 minutes to thaw and soften a bit
  2. Mix in the chocolate chips to the cool whip
  3. Assemble the sandwiches by adding the cool whip and chocolate chips to one graham cracker then add another cracker on top and press down
  4. Add to lined baking sheet or plate and press down
  5. Add to freezer to set for 2 to 3 hours or until firm
  6. Serve them frozen!

  • Can I use a homemade whipped topping? Cool whip has a different consistency than a homemade whipped topping. Cool whip also gives it that firmest texture and taste when frozen.
  • How long do these sandwiches last in the freezer? About 1 month or so. I like to let it thaw out for just a minute or so before eating.
  • Feel free to use any mix-in’s you want. I did chocolate chips but you can also use sprinkles, coconut fakes, chopped nuts, peanut butter or anything you are craving.
  • My cool whip is too firm, I can’t scoop it. Let it thaw out for about 15 to 20 minutes before using. You want it to come to room temperature a bit before you use. It comes frozen so it will be to firm if you try to mix it with chocolate chips from freezer.
