As someone who doesn’t even like cottage cheese on its own, I am obsessed with this ice cream guys. Cottage cheese is having a moment when it comes to recipes and I am here for it. I am obsessed with my Gluten-free Cottage Cheese Pancakes and using it in my Greek Yogurt Mac and Cheese too. And I full on love this “ice cream” hack.

You only need a few ingredients to make this healthier ice cream recipe and it is mind blowing. The flavor is delicious, it is packed with protein and you won’t even know the base of it happens to be cottage cheese. I love the brownie twist in this one making it more of a indulgent type ice cream flavor, yet it’s not really indulgent at all.

You can really do any other flavor combos you want too for this. But this is the flavor that we have been doing lately and I love it! This makes for an easy dessert recipe, snack or heck even breakfast. It is really nutritious and you can add whatever toppings you want too. Some melted chocolate, sprinkles, whipped cream, you name it!

What ingredients are in this high-protein brownie batter ice cream:

  • Cottage cheese – I do not recommend another sub here, sorry!
  • Banana
  • Maple syrup – or more to taste for sweeter. You can also use honey if you wanted to too
  • Vanilla extract – I like adding this in for flavor 
  • Crushed up brownie pieces – I used Perfect Bar’s new brownie flavor but you can use any brownies you want
  • Topping ideas: chocolate chips, sprinkles, peanut butter, nuts, anything!

How to make brownie batter ice cream:

  1. Add all ingredients (besides toppings) to blender and blend until smooth
  2. Mix in the brownie pieces to the blender
  3. Pour the liquid into a loaf pan and evenly spread across
  4. Add to freezer to set for 1 to 2 hours at least
  5. Allow the ice cream to thaw for about 5 minutes then scoop and enjoy with desired toppings!

  • Does this actually taste like ice cream? I mean.. we aren’t competing with Ben & Jerry’s here but it is 100% delicious and so creamy. It is a great higher protein option if you are craving ice cream but want something healthier. I have been making this daily for my kids and I. We are obsessed and it’s just so creamy and delicious.
  • What other mix-in’s can you add in? Strawberries, cacao powder, anything! There are so many possibilities with this so it’s a great base to use to inspire your dream ice cream. You can add peppermint extract for thin mint brownie batter vibes too – yum!!
  • How long does this stay good for in the freezer? About 2 months covered, but we fly right through this in our house so there is rarely any leftover.
  • Is this okay to give to kids? Yes! My kids LOVE this and eat it every night when it’s in our freezer.

  • 2 tablespoons maple syrup (or more to taste for sweeter)
  • 1 teaspoon vanilla extract

Notes

*Store in freezer for 2 months. Make sure to cover well to prevent it from getting too icy. Let it thaw at room temperature for 15-20 minutes before eating.
