Making this mint chocolate chip pudding recipe is so simple and it is a great recipe for anyone who loves the mint chocolate combination! The addition of the cottage cheese sounds random but it adds creaminess and even if you don’t love cottage cheese – you will love this pudding. 

I am a huge fan of the chocolate and mint combination and so are my kids. I eat mint chocolate chip ice cream pops basically every night. And when I don’t, I am eating my mint chocolate chip pudding. It is creamy, high in protein and it gives me full on mint chocolate chip ice cream vibes. It is so good for a sweet snack, dessert or heck it can even be for breakfast.

I love how it thickens a bit in the fridge. And it is so simple and easy to make at home. You’ll just need a bender and a few simple ingredients to try it.

What ingredients are in this mint pudding:

  • Cottage cheese – this is the main ingredient here but you can also sub a creamy thick yogurt as well!
  • Ripe banana – I say ripe because the riper the banana, the sweeter the pudding will be
  • Maple syrup – or more to taste for sweeter pudding. Can also use honey as well
  • Vanilla extract + peppermint extract
  • Mint leaves – optional but I love adding this in for fresh mint flavor!
  • Green food dye – optional to add for color
  • Chocolate chips – can add dark or milk chocolate, whichever you prefer

How to make mint chocolate chip pudding:

  1. Add all ingredients to blender besides chocolate chips and blend until smooth
  2. Then add in chocolate chips and blend slightly to chop up chocolate in pudding OR just leave and mix in with spoon
  3. Add pudding to glass/jar/tupperware and add to fridge to set for a few hours so it thickens then enjoy!

  • How long does this pudding stay good for? In the fridge you can keep it up to 5 days. It gets thicker over time too so I always like to let it chill a bit.
  • I don’t like cottage cheese, do you taste it in this pudding? No! I personally don’t love cottage cheese on its own and I love this pudding. It’s a great way to get in some protein and satisfy a sweet craving .
  • Can I give this cottage cheese pudding to my kids? Absolutely! As long as no allergies are present, I don’t see why not. I personally do and my toddlers love it.
  • How do you get this pudding green? The fresh mint leaves and you can also add some natural food dye too!
