Heck YES baby!!! Let’s make some mini brownie bites. The dessert I craved 24/7 growing up. These cutie little brownies that hit the spot every single time.
Brownies have long been a beloved dessert, known for their rich, chocolatey goodness and satisfying texture. However, those who need or choose to avoid gluten often miss out on these delectable treats. But fear not! This recipe for gluten-free brownie bites is here to ensure everyone can enjoy a bite-sized piece of chocolate heaven. Using wholesome ingredients like coconut sugar and cacao powder, these brownie bites are not only gluten-free but also packed with flavor and a hint of natural sweetness.
They are so fudgey and chocolatey and absolutely delicious. Plus they taste so good frozen OR fresh out of the oven. And the best part of making mini ones is that you don’t have to let them cool for as long. Huge perk when you have basically no patience like I do ha!
What ingredients you need to make mini brownie bites:
- Coconut oil: Coconut oil adds moisture and a subtle coconut flavor, enhancing the overall taste of the brownies.
- Eggs: Eggs provide structure and help bind the ingredients together.
- Vanilla extract: Vanilla extract enhances the chocolate flavor and adds a sweet aroma.
- Coconut sugar: A natural sweetener that complements the richness of the chocolate.
- Gluten-free all-purpose flour: The base of our brownie bites, ensuring they are safe for those with gluten sensitivities.
- Cacao powder: Provides the deep, rich chocolate flavor that makes brownies irresistible.
- Baking powder: Helps the brownie bites rise and become fluffy.
- Chocolate chips: Adds melty pockets of chocolate goodness in every bite.
How to bake copycat Little Bites Brownies:
- Preheat Your Oven: Start by preheating your oven to 350 degrees
- Prepare the Baking Pan: Line a mini muffin tin with paper liners or if using a silicone mini muffin tray, lightly grease it with coconut oil. This will make it easier to remove the brownie bites once they’re baked.
- Melt the Coconut Oil: In a small saucepan over low heat, melt the solidified coconut oil until it becomes a liquid. Let it cool slightly while you prepare the other ingredients.
- Mix Wet Ingredients: In a large mixing bowl, whisk together the coconut oil, eggs, vanilla extract, and coconut sugar until well combined. The mixture should be smooth and slightly frothy.
- Combine Dry Ingredients: In same bowl, mix together the gluten-free all-purpose flour, cacao powder, and baking powder. Mix until fully combined.
- Fold in the Chocolate Chips: Gently fold the chocolate chips into the batter, ensuring they are evenly distributed.
- Fill the Muffin Tin: Using a spoon or a small cookie scoop, fill each cavity of the prepared mini muffin tin about three-quarters full with batter. This allows room for the brownie bites to rise as they bake.
- Bake: Place the muffin tin in the preheated oven and bake for 12-15 minutes, or until a toothpick inserted into the center of a brownie bite comes out clean or with a few moist crumbs. Be careful not to overbake, as this can result in dry brownie bites.
- Cool and Enjoy: Allow the brownie bites to cool in the tin for a few minutes before transferring them to a wire rack to cool completely. Remove from muffin tray and enjoy!
Why Choose Gluten-Free Brownie Bites?
These gluten-free brownie bites are not just for those with gluten sensitivities. They offer several benefits that make them a great choice for anyone looking for a delicious and slightly healthier dessert option.
- Healthier Ingredients: Using coconut sugar instead of refined sugar provides a lower glycemic index, meaning it won’t spike your blood sugar levels as quickly. Additionally, cacao powder is rich in antioxidants, making these brownie bites a slightly more nutritious treat.
- Portion Control: Because these brownies are bite-sized, they offer built-in portion control. It’s easier to enjoy a small treat without overindulging, making them perfect for satisfying a sweet tooth without the guilt.
- Versatility: These brownie bites are incredibly versatile. They make a great addition to lunchboxes, a delightful snack for a party, or a sweet treat to enjoy with a cup of coffee or tea.

Tips for the Best Gluten-Free Brownie Bites:
- Quality Ingredients: Use high-quality chocolate chips and cacao powder for the best flavor. The better the quality of your ingredients, the more delicious your brownie bites will be.
- Don’t Overmix: When combining the wet and dry ingredients, mix just until combined. Overmixing can result in dense, tough brownies.
- Check for Doneness: Keep a close eye on your brownie bites as they bake. It’s better to underbake slightly than to overbake, as they will continue to set as they cool.
- Storage: Store leftover brownie bites in an airtight container at room temperature for up to three days, or in the refrigerator for up to a week. You can also freeze them for longer storage.

Have you baked them in a regular pan and cut in square like a traditional brownie? I would like to skip the mini pan.

SO good! I wasn’t sure what to expect but these truly brought me back to my childhood days when Little Bites were a premium snack! These are so good and feel so much better than actual Little Bites since they’re homemade and not filled with preservatives. I used a mini Bundt pan because it’s what I had on hand and it worked perfectly
Rachel
awww thank you!!!
