I was so excited to share these that I posted them without a blog post guys – omg! What is wrong with me?!

I literally just went to share this and realized there was no text on the actual blog post. I was too pumped for you guys to make these that I felt the recipe spoke for itself I guess?! And these French toast bites are the ULTIMATE brunch recipe. They are a family favorite and I had to stop Jordan from eating the entire batch haha! We first tested these when he joined me a few moths ago and he was still adjusting to the whole “don’t eat the entire recipe” thing. That is the hardest part of cooking so much food everyday. We eat it all but not all at once.

This is one of those brunch recipes to make for birthdays, weekends, holidays, anything! Heck it’s a fabulous breakfast for dinner option too if you ask me.

What you need to make the best French toast bites:

  • Brioche bread (we used Trader Joe’s), sliced into 1-inch squares
  • Full-fat coconut milk (or any milk but we love this for creaminess)
  • Eggs
  • Cinnamon
  • Vanilla extract
  • Butter, ghee or oil for greasing

How to make mini French toast bites:

  1. In a shallow baking dish or large bowl, whisk together the milk, eggs, cinnamon and vanilla
  2. Add the bread pieces to the dish and allow them to soak for a bit (flipping them over too so they coat on both sides)
  3. Warm a large skillet with some butter, ghee or oil and make sure to grease it well
  4. Add in bread pieces (allow excess egg/milk mixture to drip off before you do)
  5. Crisp for about 3 minutes on each side over medium/medium low heat
  6. Repeat for all the bread and serve with maple syrup and any other toppings you’d like

Ingredients

  • 810 slices of brioche bread (we used Trader Joe’s), sliced into 1-inch squares

Notes

*Store leftovers in airtight container in fridge for 5 days. I recommend heating up over stovetop again!
