Healthy Chocolate Chip Banana Bread Baked Oatmeal Bars made with 6 ingredients for an easy vegan and gluten-free breakfast recipe!
This recipe is dedicated to all my friends commuting to work everyday, school, all my mamas and papas looking for quick recipes.. pretty much anybody and everybody can use some of these healthier Chocolate Chip Banana Oatmeal Bars in their lives.
There are so many things I love about these bars, I don’t know where to begin.
For starters, it’s made with all vegan, gluten-free and nut-free ingredients. And you only need 6 ingredients to whip them up.
How insane is that?!
Quick breakfast food has never been so easy with these banana bread baked oatmeal bars!
These oatmeal bars combine two of my personal favorites: banana bread AND oatmeal. Plus there is no added sugar besides the banana and chocolate chips and they still taste pretty darn sweet in my opinion. You can snag these coconut sugar-sweetened chocolate chips here and use my code RACHL for free shipping!
What I also love about these bars is you can either slice some and enjoy on the sidewalk walking to the train or you can pair them with some yogurt of choice with a little fruit and nut butter on top. Plus they are very freezer-friendly. I made these twice already and stashed some in the freezer after so when we came home from Jord’s birthday weekend away, I just defrosted them for us!
Ezra has even been eating pieces of these with us. They are kid-friendly to make, which means the whole family can enjoy the same breakfast together. No more making 10 different things for everyone. These chocolate chip banana oatmeal bars are for all!
In case you are looking for some more breakfast ideas, I gotcha covered. Here are a few of my other favorite breakfast recipes from the blog: Paleo Double Chocolate Chip Banana Bread (vegan), Creamy Banana Bread Chia Seed Pudding (vegan + gluten-free) and Gluten-free Cinnamon Swirl Breakfast Bread (grain-free).

What can be used instead of peanut butter/tahini
Rachel
any nut butter

My toddler devours these! I love how simple these are and the sweetness is perfectly subtle. I used natural peanut butter instead of tahini and they always come out perfect. They really are made up of just the good stuff 🙂
Rachel
aw yay!!

Hi Rachel! Just put theses in the oven and I think they will be great! Subtle note, the directions to not explicitly say when to add the cinnamon from the ingredients list so I took some liberties and added with other dry ingredients – fingers crossed, it wasnt intended to be sprinkled on bars after they are cooked 😉
Rachel
Luckily cinnamon can be added whenever 😉
Rosie
These are amazing!! I subbed with almond flour. Love the bar form of banana bread
Rachel
yay!!! thank you!!
Rachel
🙂 totally add honey or maple syrup for sweetness!! depending on the nut butter that could make them a bit thicker/dense with oat flour for sure.
Brittany
Do you suggest adding less of any of the ingredients if I were to add honey or maple syrup?
Rachel
probably not! i wouldn’t add more than 1/4 cup though!
Catherine
Hi! I saw on your Instagram that you put it all in the blender! Can I just do oats and put them in the blender and not have to blend the oats separately?
Rachel
i haven’t tried – but let us know if you do!
Rachael
Just put all my bananas in the freezer – think i can use frozen bananas in this recipe?

I made these yesterday and I am blown away by how delicious these are!!!! I followed the recipe exactly as written (very easy and quick). It was super-delicious fresh out of the oven, but after 24 hours it is HEAVENLY. Thank you so much for providing the yummiest, simplest recipes for those of us who are eating clean! I don’t feel like I’m missing out at all. 🙂
Rachel

We double this recipe and it’s a STAPLE in our home. It’s been my husband’s breakfast off and on for over a year now. Gave it to my 9 month old (minus the chocolate chips) and no surprise she loves it too.
Rachel

Made these today with some bananas I needed to use up! I subbed almond flour and they turned out amazing – perfect for breakfast or afternoon snack! Did not turn out too dry with the almond flour substitute. Will definitely be making these again.
Rachel
aw thanks!! xx
