They are HERE. The most delicious and insane healthy Oreo Whoopie Pie Cookies that taste like a classic oreo cookie meets chocolate cake filled with dreamy vanilla forsting in the center. The flavor going on in these cookies is too die for, you guys are going to love.
I mean, there isn’t much to say beside that these are one of my favorite recipes of all time now. They are cakey, chocolatey, easy to make and they aren’t overly sweet like most decadent desserts like this. They have a little chewy consistency with the cookie and the vanilla frosting just melts in your mouth after a bite. It is impossible not to eat the entire thing – that is for sure.
Ingredients needed to bake these:
The great thing about this recipe is that they are sweetened with coconut sugar (my go-to unrefined sugar for baking) and they only require 6 main ingredients to bake. Totally crazy how easy these are to make. Here is what you’ll need:
- Egg – I haven’t tested flax egg but it should work
- Solidified coconut oil – softened but not liquid form
- Coconut sugar – please don’t sub maple syrup or honey!
- Gluten-free oat flour – please see this blog post on subbing oat flour
- Cacao powder – or cocoa powder works
- Simple Mills Vanilla Frosting
How to make these oreo whoopie pie cookies:
- Preheat oven to 375 degrees and line a large baking sheet with parchment paper
- In a large bowl, cream together the egg, coconut oil and coconut sugar until fully combined
- Mix in the flour, cacao powder and baking powder until combined (batter will be thick)
- Spoon about 2 tablespoons of batter into your hand and roll into a ball then slightly press down to flatten (only a little) and add to baking sheet. Repeat for the dough – you should have 12 cookies total
- Bake in oven for 5 minutes then rotate tray and bake for another 5 minutes
- Remove from oven and let the cookies cool completely. I added them to a freezer to expedite time
- Smear some frosting on 6 of the cookies then add another cookie on top to form the “oreo whoopie pie”
