Mini Potato Latkes with Smoked Salmon

HEY BABY!! If you want a latke recipe for the holidays or really any time of the year – I gotchu.

Apparently I married a professional potato grater. Because mcjordO has been grating the potatoes for us every single year since I met him. He will literally do *anything* to eat latkes. And I’m not going to lie – we make some really really good latkes. I love how easy they are to make, just don’t love much they make a mess/stink up my apartment .. but for the classic eats – it so worth it.

You can use this healthier latke recipe as your go-to for potato pancakes OR you can take things up a notch and add some cream cheese and smoked salmon like we did here and serve them as a little appetizer of sorts. I loved making these for Hanukkah and the holidays and our kids devoured them too. And if you are pasycho like me.. just make these the day before you plan to clean the kitchen because – wow! They mark their territory.

You can also probably oven bake these too, but they of course wouldn’t get as crispy.

What ingredients you need to make these paleo potato latkes:

  • Russet potatoes, peeled and grated
  • Onion, peeled and grated
  • Egg
  • Almond flour
  • Avocado oil for greasing
  • Toppings: chive cream cheese (or anything!), smoked salmon

How to make the *best* healthy latkes:

  1. Squeeze ALL the excess water from the potatoes in a dish towel or cloth
  2. In a large bowl, mix together the potatoes, onions, egg and almond flour until fully combined
  3. Warm a large skillet with oil and once warm add a scoop or so of potato mix to the pan and repeat for however many you can comfortably fit on a pan
  4. Cook for about 3-5 minutes on each side (or until crispy) and remove from pan and add to a cooling rack
  5. Top with cream cheese, smoked salmon and anything else you are craving!

*Store leftover latkes in the fridge for 5 days. I like to add toppings before serving.
