This Roasted Caesar Broccoli is such a delicious side dish to make. Not to mention it is the ultimate dish for caesar salad and broccoli lovers. Roasted broccoli coated in homemade caesar dressing, crispy cheese crackers and lots of Parmesan cheese.

I never thought I’d be excited to eat broccoli. Until I made this roasted caesar broccoli and life will never be the same.

I have made this now 4x since I first tried it the other week. And it is perfection guys. Think roasted broccoli coated in my favorite caesar salad dressing with shaved parmesan cheese, crispy breadcrumbs and holy moly it is GOOD.

I find myself hovered over the bowl just eating straight up and not even platting it. I am not the biggest broccoli lover and this recipe has gotten me to crave broccoli. But then again there is something to be said about eating anything with cheese lol!

This dish comes together in just 25 minutes and it’s one you can serve as a side dish or you can make it more of an entree itself. Add in some roasted or grilled chicken, bacon, anything you want. This dish is too good not to try.

What ingredients you need to make Broccoli Caesar Salad:

  • Broccoli florets – I used fresh for this recipe for consistency purposes
  • Olive oil or avocado oil – either oil variety can work here
  • Gluten-free crackers or breadcrumbs – I usually use crushed up crackers since it’s what I have on hand but really anything can work
  • Freshly shaved parmesan cheese – I love using a fresh block of parmesan 
  • Caesar dressing to taste – I use this recipe or my yogurt caesar dressing 

How to make Roasted Caesar Broccoli:

  1. Preheat oven to 425 degrees F
  2. Spread florets across baking sheet and drizzle with olive oil and use your hands to mix so the broccoli is evenly distributed
  3. Season with salt and pepper then roast for 15 to 20 minutes or longer if needed
  4. While broccoli roasts make the breadcrumbs by heating some oil or butter in small skillet over medium heat
  5. Add breadcrumbs and stir to coat them
  6. Toast for 2 to 3 minutes or until they are golden in color and crunchy
  7. Remove from heat and set aside
  8. Once broccoli is finished, place into large bowl or serving dish then drizzle with dressing, add shaved parmesan and breadcrumbs and enjoy!

FAQs and tips on making Caesar Broccoli:

  • Can I use frozen broccoli too? For texture/consistency purposes, I prefer using fresh broccoli so it’s not too soft and it’s more crispy/crunchy.
  • Do I have to make my own dressing? Nope! You can use a store-bought caesar dressing if you prefer. But I do love do make my own and it’s made with such simpler ingredients.
  • What is the best way to store this? In the fridge for 5 days. I like to eat it cold or you can reheat if you prefer too.
  • Can I add anything else to the dish? Totally! Add some cooked bacon or cook bacon *with* the broccoli. Add some cooked chicken to make it an entree. Or add some pumpkin seeds or nuts to this dish for more crunch.
