    I feel like I have been neglecting my main boo, banana bread, recently. I am still in awe of how many of you make the Paleo Chocolate Chip Banana Bread daily. It blows my mind and warms my heart at the same time when I see so many of you enjoying it as much as I do. It is a staple in our freezer and in all honesty, not many banana breads ever top it.

    Until I made this gem.

    Whenever someone asks me what my favorite recipe on the blog is, I always feel odd answering and picking one recipe. It is like picking a favorite child, ya know? But I always respond and any of the banana breads. I feel less guilty that way since there are a handful of ones to choose from.

    We are taking a break from sharing every cookie recipe imaginable to give you guys a little gingery loaf of sorts. I personally am all about the cookie life, but gingerbread is a must around the holiday season too. Especially one like this that is lower in sugar and can be served for breakfast, snack or dessert! Really anything if you ask me.

    This gingerbread is paleo, gluten-free, grain-free and has no refined sugar in it.

    It also doesn’t have a crazy long list of ingredients to bake it. Just a few we will get to soon!

    I found this bread to really vary in baking times. Sometimes it needed 45 minutes, others 55 minutes then once 65+ plus. What I did notice is that I used different almond flours and nut butters each time so the consistency of those can really make a difference. Please have a little patience when baking it!   • My Favorite Recipes Using Coconut Flour

    Sharing My Favorite Coconut Flour Recipes that Anyone Can Make.

    Coconut flour is one of those ingredients that you are either hesitant on buying because you don’t know what to do with it, but you know it is better for you. Or you have it sitting in the pantry or fridge and are intimidated to make anything with it.

    Well that is going to end today friends! I am filling you in on all the details of coconut flour, why I use it and where I buy it. I also am sharing my favorite recipes from the blog that use coconut flour in them, so you can get over the hump and make some coconut flour magic!

    Okay so first things first, the details on baking and cookie with COCONUT FLOUR!

    1. Coconut flour is a grain-free, nut-free, paleo flour that is lower in net carbs and can also be used in both sweet and savory recipes
    2. Coconut flour should be kept in the fridge once it is opened to help it stay fresh longer and prevent it from spoiling
    3. Buying using coconut flour, you are adding more fiber, protein and vitamins to your food. There are over 7 grams of protein in 1/4 cup,, making it beneficial for blood sugar levels
    4. I have found that baking with only coconut flour for vegan recipes can be a challenge. It works best when you combine it with another flour like almond for egg-free recipes.

    Coconut Flour FAQ:

    • How can I substitute coconut flour in a recipe?  Coconut flour is not a 1:1 sub for regular flour. It is much thicker. You will need about 1/2 or less of the amount of coconut flour as you would oat flour or regular flour. Little goes a long way 😉 Coconut flour absorbs liquid much more than your usually flour, so double the liquid as well. And that also means you should be doubling the amount of eggs you use!
    • Where do you store your coconut flour? In the fridge! It stays fresh longer there. I usually buy larger containers of it too to keep on hand and store it with my other grain-free flours in the fridge.
    • Does coconut flour tastes like coconut? It has a subtle coconut taste, but it isn’t as overpowering as coconut oil or using coconut butter. Especially when you combine it with other ingredients. It does have a bit of a different texture than your usual grain-based flour though.

    My apologies for taking 4 years to share a chocolate peanut butter BANANA MUFFIN!

    But they’re here and they are easy. They are healthy and these muffins make the perfect breakfast or snack recipe.

    I actually baked this on a total whim a month ago when I went to make my Bakery-Style Banana Spice Muffins and realized I didn’t have all of the ingredients I needed to make them. This is usually how I end up creating many of my recipes actually. I go to bake one from the blog, don’t have the goods and am too lazy to get more ingredients.

    I love that these healthy muffins are made with just 7 key ingredients and they have just the right ratio from moist to cake.

    These muffins also combine 3 of the best flavors in the world into one recipe, so there isn’t really much not to love. We have our banana bread, peanut butter and some dark chocolate.

    Plus you only get 6-7 muffins when you make this recipe, so it isn’t a large batch. Just the right amount for a couple days of snacking and eating. Continue Reading

    I contemplated saving these cookies for when the holiday season hits us. But that would just be cruel.

    I used to test recipes months advance then wait to share them on the blog. Think 6-8 weeks out I’d be testing and planning content for you guys. Nowadays it is about 1-2 weeks out, and sometimes it is a day or less in advanced.

    It is so hard to not share and post a new recipe I am excited about. Like these healthier peanut butter blossom cookies. Why wait until “holiday cookie” season to share them?! Plus it is cookie season all  year around over here.

    When I was in school, these were only 35 cents. How crazy!!!

    I am 100% aware that I sound like a grandpa right now saying this. But how insane is that?! You probably can’t even get a gum ball these days for that.

    Today we are making those cosmic brownies from our childhood, but with a healthier twist. Of course they don’t taste exactly like the real deal. But I’m also not using corn syrup 4 different times like the actual ones do. I looked up the OG cosmic brownie online when I started testing these. And I’m not going to lie and say I was surprised by the ingredients, but wow!

    It is shocking to me that we would sell something like this in schools nonetheless. But times are different now and soon I will be baking all the goods to bring to Ezra’s school when he is older. As a society, we are more aware of what we are feeding our families and eating. Paying attention to sugars and the nutritional value of what we keep around. Granted there is always a time and place for the classics but for the reoccurring consumption, I like to make them a bit healthier.

    And now we can try to make our own copycat cosmic brownies at home.

    Incase you are wondering what a cosmic brownie is…

    Think a fudge-y brownie layer topped with a thick chocolate frosting and some little candies on top.

    I personally love eating these frozen. Then dipped in some warm non-dairy milk like coconut or oat or almond. You can use whatever milk you wish!

    December is fully dedicated to making an insane amount of cookies to bake with you guys.

    Starting with these Gluten-free Chocolate Chip Monster Cookies that are so good that Ezra’s nanny’s grandchildren, my family and my friends have been requesting them over and over and over again.

    To be honest, I would refer to these as some sort of kitchen sink or M&M cookie. But after polling my Instagram community about what kind of cookies you guys are craving, everyone said “monster cookies”.  So whatever you want to call them is cool with me. All that matters is they taste kick a$$ and have the most epic line up of flavors.

    These healthier monster cookies are going to be one of those recipes I bake for Ezra and his friends when they are over. Not to mention, they are so simple and easy to make too.

    You only need 8 ingredients and 30 minutes to whip these healthier Gluten-free Monster Cookies up.

    You will want to stock up on my beloved If You Care baking sheets for all of your baking/cooking needs this holiday season. And really any season if you ask me.

    I have been going through their baking sheets and sandwich bags like this is no tomorrow. The sheets help prevent the cookies from sticking. This cookie dough is a little sticky so you will definitely want to line your tray with something. Then I use the sandwich bags when I gift these cookies to friends and family.

    This won’t come as a surprise to most but, I have made and eaten a lot of sweet breads in my life.

    There my go-to when I am in the mood for baking something and they’re my favorite to keep around for breakfast, sneaking and dessert. It’s like the trifecta over here.

    Today’s bread is one that has been requested for what feels like forever. I shared a Paleo Lemon Berry Pound Cake last year and since then, many of you beautiful humans have been asking for a vegan and nut-free version. And today is the day, friends!

    This healthy bread tastes like blueberry muffins and lemon poppy seed muffins in one!

    We have a healthy Lemon Blueberry Breakfast Bread that is gluten-free, nut-free and plant-based. It is extra cakey and “moist” and full of flavor, but just the right amount of lemon. I’m not a huge fan of when lemon overpowers a recipe and prefer just the subtle splash of it in each bite. If you do like things more lemon-y just add a couple more tablespoons of lemon juice or zest.

    I use ingredients for this that you likely already have in your pantry if you are used to baking recipes from the blog. We can use either gluten-free oat flour, spelt flour, brown rice flour and probably even an all purpose flour if you prefer. I haven’t tested grain-free ones here (this recipe is grain-free though). Instead of using eggs in this, we are making flax egg using Garden of Life’s Organic Flaxseed – an absolute staple in my pantry along with their coconut oil. Continue Reading

    When I tell people that my brother has a nut allergy, they look at me like I am crazy! I grew up loving peanut butter everything and eating tons of PB&J sandwiches, Reese’s etc. but we always had to be extra cautious in the kitchen for Seth just incase.

    Nowadays there are a lot of schools that don’t allow nut-based products in them and more and more people have nut allergies. This can definitely be a struggle trying to eat healthier since many things have almond flours or nut butters in them. But after testing recipes for the past few years, I have a handful of recipes on the blog that are healthy and delicious (at least I think so!) while also are still nut-free.

    I find it is really easy to also sub most recipes to make them nut free-friendly. You can use tahini or sunflower butter instead of nut-based butters like peanut and almond. Gluten-free oat flour and spelt flour are two of my personal faves to go to for nut-free flours (and coconut too if you can eat coconut-based products!). Any recipes on my blog that call for almond milk or any nut milk can easily be subbed 1:1 with coconut milk, oat milk, hemp milk, anything!

    When it comes to brands, I love that Enjoy Life Food’s is free of the top allergens (including nuts) so anyone with severe allergies can eat these products. Their baking chocolate is my absolute fave!

    Below you will find a handful of my go-to nut-free recipes when I’m making something for anyone with a nut allergy or even if they just don’t enjoy the taste. There is a mix of cookies, cinnamon rolls and various other sweet treats for you guys to whip up!

    As if we need a season as an excuse to eat cookies! But I know the holidays are all about the baking and usually all about baking COOKIES! Who can blame you? They are the the most comforting and usually the easiest dessert to whip up and there are so many different kinds of cookies to make, which leads to us baking all the kinds.

    I found myself baking 8 dozen cookies the other day in preparation for this blog post and I’m not going to lie, I saw my future in front of me as this is likely what I will be doing with my kids every holiday season. I love nothing more than baking and eating cookies all year around but around the holidays it really is a totally different vibe. You can gift them to friends and family for a nice homemade gift. Bring them to the office to spoil your co-workers or just bake them for yourself on a Friday night and watch Real Housewives reruns because that sounds amazing to me right now. During this season though it’s usually Home Alone 2, You’ve Got Mail and Love Actually.
