I LOVE THESE SO MUCH!

Sorry for the all caps, but this recipe has you guys in for a real treat. One of my best ever desserts if you ask me.

You guys know I live for my dessert and post-dinner cookies dipped in milk. And these oatmeal cookie sticks are pretty much a dream when it comes to dunking into some milk. Half the time cookies don’t fit into my favorite mug but that isn’t the case with my oatmeal cookie bars.

These were inspired by two of my favorite desserts. One being those The Best Gluten-free Chocolate Chip Monster Cookies and my Chocolate Chip Cookie Sticks from my cookbook.

This is the type of dessert recipe you will want to keep on hand at all times. You can store them in an airtight container for up to 5 days or you can wrap them in some foil or freezer friendly bags and keep them in the freezer. It is worth noting how delicious they are frozen too. You guys know I live for my frozen desserts.

You’ll see below in the recipe that I mix in some chocolate chips and some vegan m&m candy things. You can add in anything else you’d like too such as coconut flakes, peanuts, whatever you have on hand. I also think a little saltiness from pretzels would be delicious in these monster oatmeal cookie bars.

What ingredients you’ll need to bake insanely delicious monster oatmeal cookie bars:

  • Eggs – I haven’t tried flax eggs yet but I think they’d work well!
  • Coconut sugar – or you can use a mix of cane and brown sugar if that is all you have. Maple syrup/honey won’t work
  • Liquid coconut oil or avocado oil – either oil will work here
  • Gluten-free oat flour – I haven’t tested a sub but if not gluten-free then spelt flour works well (see this post for oat flour 101)
  • Gluten-free rolled oats – or any old fashioned or even quick oats would work. Steel cut won’t work well.
  • Dark chocolate chips – code RACHL for free shipping on my favorite chocolate
  • Vegan candied m&m’s – truly the best addition to these and I love snacking on them when the cookies bake

How to make these healthier monster chocolate chip oatmeal cookie bars:

  1. Preheat oven to 350 degrees and grease a 9×13 baking dish
  2. Whisk together eggs, sugar, oil and vanilla extract until smooth
  3. Mix in flour, oats and baking powder until fully combined (you will need to use those muscles to fully mix! Or wash + dry your hands and mix with them, which helps too)
  4. Fold in chocolate chips and m&m’s and add to baking dish
  5. Bake in oven for 20-25 minutes or until edges are golden
  6. Allow the bars to cool (if you can!) then slice and enjoy
