Calling all my takeout friends out there!! I have another epic easy recipe for you that may just make you put that. takeout menu away tonight.

Allow myself to introduce these Vegan Almond Butter Stir Fry Noodles!! They’re easy, they’re delicious and they only take 15 minutes to make!! Plus you can adding protein you want to the dish. Chicken, tofu, shrimp, anything. And you can use any noodles you want. I have made this with soba noodles and whole wheat noodles before. Both turned out great. I also want to try with egg noodles soon too.

Oh and I totally cut corners on veggies here. I headed straight to the freezer aisle in the store and got all frozen and already sliced to save time.

What ingredients you need to make this easy stir fry noodle dish:

  • Noodles of choice (soba, whole wheat, egg,  gluten-free, anything!)
  • Sesame oil (or olive or avocado oil)
  • Veggies of choice (I used frozen broccoli, carrots and peppers and onions!
  • Creamy almond butter (code RACHL for free shipping)
  • Coconut aminos
  • Ground ginger
  • Maple syrup (optional)
  • Hot water

How to make this healthy takeout inspired dish in just 15 minutes: 

  1. Cook the noodles per package but undercook about 3 minutes or so!
  2. Rinse in cold water and set aside
  3. In a large skillet add the oil and sauce the veggies for 5-7 minutes or until ready
  4. Mix together the sauce ingredients then toss together the noodles, veggie mixture and sauce together and enjoy!

Stir fry:

  • 8 ounce noodles of choice (soba, whole wheat, egg,  gluten-free, anything!)
  • 12 tablespoons sesame oil (or olive or avocado oil)
  • 56 cups cut veggies of choice (I used frozen broccoli, carrots and peppers and onions!)

Stir fry sauce:

  • 4 tablespoons creamy almond butter (code RACHL for free shipping)
  • 1/4 cup coconut aminos
  • 2 tablespoon sesame oil (or use olive or avocado oil)
  • 1/2 teaspoon ground ginger
  • 2 tablespoons maple syrup (optional)
  • 2 tablespoons hot water

Instructions

  1. Cook the noodles per package but undercook about 3 minutes or so!
