I am clearly craving asian-flared dishes lately.

Fried rice, Easy Whole30 Chinese Chicken and Broccoli and now this easy stir fry noodle bowl!

Usually Jordan adds broccoli to our grocery list whenever he goes. He loves roasting it and keeping things pretty simple. But me on the other hand.. I am not the biggest fan of broccoli and I can only eat it if it is coated in flavors and in a dish of sorts. Kind of like this noodle bowl.

This stir fry noodle recipe is ready in just 10 minutes. It is entirely vegan, nut-free, gluten-free and is super flavorful and satisfying and made with all healthy ingredients.

Your traditional stir fry doesn’t have noodles in it, but I love these pad thai rice noodles so much and being able to cook with them. They keep things exciting and they’re an easy way to spice things up a bit besides rice.

This dish is one of those recipes that taste delicious freshly made and also leftover. I love eating it cold out of the fridge and snacking on it during the day. You can also add in any protein you wish too like chicken, beef or even some tofu if you prefer.

What ingredients you need to make this better-than-take out dish:

  • Pad thai rice noodles – or really any noodles you prefer!
  • Broccoli, carrots, onions – you can use any veggies you wish. This is what I had on hand and the flavors were great together
  • Sesame oil – you could use another oil but this gives the dish a lot of flavor
  • Creamy tahini – a couple spoonfuls of this goes a long way in the dish!
  • Coconut aminos – my go-to for anything that is supposed to have soy sauce in it
  • Sesame seeds – for garnish and a little crunch and texture

Ingredients

  • 8 ounces pad thai rice noodles (or any noodles of choice)
  • 1 head broccoli or baby broccoli, cut (I bought the baby broccoli from trader joe’s!)
  • 3 large carrot sticks, chopped
  • 1 small onion, chopped
  • 2 tablespoons sesame oil (or any oil!)
  • 3 tablespoons coconut aminos (or use soy sauce or tamari)
  • 2 tablespoons creamy tahini
  • Sesame seeds for garnish

Instructions

  1. Cook noodles per instructions on package and begin making the veggies
  2. Warm 1 tablespoon of sesame oil over medium heat and add in the broccoli, onion and carrot. Cook over medium heat for about 5 minutes as noodles cook
  3. Once noodles are done, strain excess water and add to the pan with the veggies
  4. Mix in the other tablespoons sesame oil, tahini and coconut aminos. If the noodles are too stuck together and don’t look creamy, add in a splash of water!
  5. Sprinkle with sesame seeds and enjoy!

*Store leftovers in airtight container for 5 days
