Hello!!!!! To the bonus recipe of the month – Beef Stir Fry! This recipe was not supposed to go on the blog. And it really wasn’t even planned out as something that was going to be cooked over here. Until I realized we had nothing for dinner and I was determined to use all things we had either in the pantry or fridge already.

To be honest, those are my favorite kind of meals. The ones that I whip up out of no where and they always end up being our favorite. I had some grass-fed steaks in the freezer, random veggies leftover from grocery shopping I didn’t use and as always I had bone broth in the pantry. Which if you know me well, you know I *live* for my daily cup of broth.

Bone broth is one of those secret weapons in the kitchen. You can sip it as is for the nutritional benefits it provides. Or you can use it as you would cooking broth or just add to any recipe to make it more flavorful. It adds the best flavor and juiciest to recipes. And it makes for a delicious sauce base in this beef stir fry if I do say so myself. I love keeping chicken or beef broth on hand and it’s one of those pantry staples that you’ll find are SO versatile too.

The Most Delicious 20-minute Paleo Beef Stir Fry made with all gluten-free and dairy-free ingredients for a healthy and easy weeknight dinner recipe!

What ingredients you need to make this healthy beef stir fry:

  • Grass-fed steak (ribeye or sirloin work great here)
  • Beef bone broth (code RACHL for 20% off)
  • Coconut aminos
  • Tapioca flour or arrowroot flour
  • Maple syrup or honey
  • Avocado oil
  • Garlic cloves, minced
  • Small onion, sliced
  • Small red bell peppers, sliced thin
  • Bok choy, washed and sliced
  • Baby bella mushrooms, sliced
  • Ginger
  • Chopped scallions/green onions and sesame seeds to garnish
  • Optional: serve on top of your favorite rice or noodles

How to make this stir fry in 20 minutes:

  1. Slice steak thin across the grain and set aside
  2. Whisk together broth, coconut aminos, flour and maple syrup to make the sauce (it’ll be watery) and set aside
  3. In a large skillet warm the oil and add in the garlic, onions and peppers and cook over medium heat for about 5 minutes
  4. Add in the mushrooms and bok choy and ginger and mix together
  5. Cover and cook for 5 minutes or so until sautéed to your liking (I like the veggies soft but not overcooked)
  6. Remove veggies from skillet and add a dash of oil and begin cooking the steak on medium heat for about 3 minutes on each side, or until ready
  7. Remove steak from skillet and add in the sauce ingredients
  8. Allow the sauce to bubble a bit and cook over medium heat so it thickens for about 1-2 minutes
  9. Add the veggies and steak to a serving dish then pour sauce on top and mix together to combine
  10. Garnish with scallions and sesame seeds and serve!

*Store leftovers in fridge for 5 days. I reheat in an oiled skillet
