This easy cheesy delicious broccoli cheddar casserole is speaking to my soul you guys.
I am craving all of the cozy comfort foods every single day. I want everything that is warm and cooked and cheesy (whether it is real cheese or not). And of course everything that is easy to whip up is the best in my book.
This vegan dinner recipe is the kind of dish you can make and enjoy for the week. Or you can make it for your family for an easy dinner idea. Ezra and Jordan and I all love this dish. And it has quickly become a go-to over here. Plus I love that you can add in any protein too. When you cook the onions, you can cook some diced chicken breasts or a vegan option as well.
I hope you guys love this healthy dinner dish as much as we do. I usually reheat it in the microwave for the sake of simplicity but you can also warm up in a pot over the stove too!
What ingredients you need to make the easiest broccoli cheddar casserole:
- Olive or avocado oil – either oil works well
- Celery – just a few for extra veggies
- Onion – any onion you prefer
- Garlic cloves
- Cassava orzo – I haven’t made this recipe with a different orzo or rice but I do think another brand would work well – just cook time may vary
- Vegetable broth – or use bone broth for not vegan too. I love using chicken bone broth
- Full-fat coconut milk – I love using the full-fat one so it is extra creamy
- Organic broccoli florets – I steamed some frozen ones, so easy
- Shredded non-dairy cheese – or use regular cheese for dairy option – cheddar tastes great too!
- Optional: some breadcrumbs on top for crunch or spices like red pepper flakes, basil, black pepper and sea salt to taste. You can also add in any proteins you’d like
Directions on how to cook this vegan broccoli casserole:
- Warm a large 12-inch cast iron skillet with the oil then add onion, celery and garlic and cook for about 5-7 minutes or until fragrant (if you don’t have cast iron skillet – use a pan then you’ll have to add everything to an oven-safe dish)
- Next add the orzo, vegetable broth and coconut milk and sit all together and bring to a boil
- Lower heat to a simmer, cover and cook for 15-20 minutes (stir ever 5 minutes or so!)
- Preheat oven to 425 degrees and add in the broccoli to the skillet and mix in
- Add skillet to oven to bake for 10 minutes then sprinkle cheese on top (if using breadcrumbs add these now too) and add back to oven and cook for 5 minutes then broil for 1 and enjoy while warm!

Notes
*If you don’t use this brand orzo – the cook times may vary and the amount of liquid but I do think rice would work well!
**Store leftovers in fridge for 5 days and warm in microwave or over stovetop in a pot

Been making your recipes most nights and have been planning to make this since you posted. We added chicken and used Eat Banza chickpea orzo because they were sold out of the cassava kind.
