



Hey friends!! Morning craziness got you stressing over breakfast? I get it!! With three little ones running around and approximately zero time to myself in the AM, I’ve become straight-up obsessed with making my breakfast of time to save my sanity (and stomach!).
I’ll be writing a few posts for this series each focused on a different category of breakfast items. Today I will be starting off with my favorite health baked breakfast recipes to meal prep that you can prep on Sunday and enjoy allll week long. I broke these down into subcategories of baked good – breads, bars, muffins, and others. happy baking!!
But here’s the thing – these healthy baked breakfast recipes to meal prep have seriously transformed our mornings:
- They’re READY TO GO when you need them
- You can customize them based on what your family loves
- Most of them freeze beautifully (hello, future you will be so grateful!)
- They’re way healthier than grabbing something processed on the run
Before we get started, here are some of my favorite items to prep these items:
- muffin pan: love that this one is silicone and so easy to get the muffins out of!
- reusable muffin cups: a great zero-waste option
- granola bar mold: these is the best for anything in the bar section!
- loaf pan: this is my favorite for any type of bread loaf
- parchment paper: these are my favorite for easy clean up and its unbleached which is best IMO!
- food storage: this set is great for storing all the items while keeping them fresh!
Let’s talk storage because it’s key to making these last!
Here’s what works for our family:
- Counter storage (2-3 days): If we’re going to eat everything within a couple days, I store muffins and cookies in a glass container like these or these with a tight lid.
- Refrigerator storage (up to 1 week): Most of these recipes stay fresh in the fridge for about a week.

Let’s talk MUFFINS, friends!!! These little handheld bites of joy have completely transformed our morning routine.
