This Cinnamon Roll Cake is one of the most delicious and easy desserts to make using boxed cake mix and a few more ingredients and you will have a tasty cake that tastes like cinnamon rolls.

I was standing in my pantry carving cinnamon rolls, but had no desire into doing the whole rolling out the dough kind of thing. So instead I made my favorite vanilla cake mix and added a few ingredients to make the cake taste just like an ooey gooey cinnamon roll!

This recipe is so easy to make and you only need a few ingredients to make it. It is perfect for a quick dessert for any occasion or just any day at home you want cinnamon rolls and cake like I had last week.

What ingredients you need to make this dreamy cinnamon roll cake:

  • Vanilla cake mix – I used this gluten-free one and it was perfect. I love that it doesn’t have refined sugars and it is also grain-free.
  • Coconut sugar – you could also use brown sugar and cane sugar too.
  • Cinnamon – the key ingredient to make the cinnamon roll center!
  • Powdered sugar – the sugar we use for the glaze.
  • Non-dairy milk – we add this to the glaze to make it drizzle on top!

How to make cinnamon roll cake:

  1. Preheat oven 350 degrees
  2. Prepare cake mix per instructions on the box and mix together
  3. Pour into greased 8-inch cake pan
  4. Mix the coconut sugar and cinnamon together then pour it onto of cake and swirl
  5. Bake in oven per instructions on box
  6. Once cake cools, mix together glaze of powdered sugar and milk and drizzle on top and slice and enjoy!

  • What exactly is a cinnamon roll cake? It is a blend between cake and cinnamon rolls!! AKA an easier, less labor intensive recipe to make with cake mix and a few other ingredients to make a cinnamon sugar blend and a glaze on top.
  • Can you make this ahead of time? Totally! I recommend adding the glaze right before serving for the optimal texture and experience. But it stays good for about 5 days or so!
  • Can you use any cake mix for this? Yes! Any vanilla cake mix works well in this recipe. I like using a gluten-free one that has no refined sugar.
