Want to make the best meal ever in under 30 minutes?! These Mexican Pizzas are a hot commodity in our house. My toddlers are obsessed as is my husband. And even though we haven’t had the actual Taco Bell version, I can say this tastes even better than there’s. And it is 100x healthier too.

In case you are wondering what Mexican Pizza even is – It is a taco-inspired pizza-meets-quesadillas-a pizzadilla! Typically a tortilla is the “crust” then you add any toppings you want. These are inspired by the iconic Taco Bell version that you may have tried or at least heard of.

These are really easy to make at home. Mexican Pizza features seasoned beef, refried beans, crispy tortillas, cheese and some “pizza sauce” on top. You can add any additional toppings too after cooking like guacamole, sour cream, cilantro, anything you want.

This Taco Bell Mexican Pizza tastes like a crispy, meaty, cheesy quesadilla. But this is even better than a quesadilla in my opinion. And if you are gluten-free or more health conscious – you may love this even more than the Taco Bell version. or maybe you haven’t even had theirs before and this will be your first Mexican Pizza.

What ingredients you need to make gluten-free Taco Bell Mexican Pizzas:

  • Gluten-free tortillas – or if not gluten-free, use any flour tortilla (corn won’t work well here)
  • Refried beans – canned and warmed up per instructions
  • Taco meat – you can use ground chicken, beef, turkey here. Takes about 5 minutes to make this
  • Mexican cheese blend – or use your favorite shredded cheese
  • Salsa or enchilada sauce – I used this Botana sauce

How to make copycat Taco Bell Pizzas:

To make taco meat:

  1. First cook taco meat by adding ground beef into large skillet
  2. Break meat into larger pieces and let is brown for 3-4 minutes
  3. Season with taco seasoning and break meat into smaller pieces with a spatula
  4. Remove from skillet with meat is fully cooked through

To assemble Mexican Pizza:

  1. Preheat oven to 375 degrees F and spray tortillas on both sides with cooking spray
  2. Place one tortilla on flat surface and spread refried beans on top followed by taco meat and cheese
  3. Place the next tortilla on top and spread across salsa or sauce then sprinkle more cheese on top
  4. Bake on a baking sheet wire rack for about 8 minutes or until tortilla is crispy and cheese is melted. I also like to broil for 30-60 seconds before removing from oven
  5. Serve warm with desired toppings!

FAQs on making the best Mexican Pizza:

  1. Can I use corn tortillas instead? Flour tortillas work best here. The corn tortillas would break too easily and changes the “crust” of the pizza
  2. What ground meat works best? Really you can use chicken, beef or turkey. I typically do beef but any meat works.
  3. Can I use a store-bought taco seasoning for the meat? Yes totally. I prefer to make my own so the sodium level is lower though, but if you have a favorite, you can use that too.
  4. Can this be prepped ahead of time? You can have the ingredients ready and prepped but I don’t recommend making it ahead of time and saving. It tastes best fresh from the oven.
  5. Why do you put cheese on two layers? So Taco Bell only puts cheese on top but I think adding it twice makes this even better and it stays together between layers. But you don’t have to!
