Plus you can add anything you want protein wise if you want like meatballs or chicken. Or leave it as a nice vegetarian dish.

  • Roasted red peppers – liquid drained from the jar before adding to blender
  • Cooking broth – veggie or chicken will work, totally your preference
  • Full-fat coconut milk – with the cream on top of can! This makes the sauce extra creamy
  • Fresh basil leaves – I love adding a lot of basil but tweak to your preference
  • Garlic cloves – if you love garlic, add more garlic cloves! I like two in this recipe
  • Grated parmesan cheese – freshly grated parmesan in this sauce and on top of the pasta is perfection
  • Pasta of choice – I used this gluten-free one

  1. Boil water and cook pasta per instructions on packaging
  2. Add the sauce ingredients to blender or food processor and blend until smooth
  3. Pour over warm pasta and enjoy!
