These Crispy Parmesan Potatoes are one of our favorite potato recipes to make! Roasted in the oven, extra crispy and flavorful with a spiced parmesan layer.

These crispy oven-baked parmesan potatoes are EPIC fam. Once you make these, you won’t want potatoes any other way! The crispiness of the potato with the parmesan and spice base is a combination that is too die for.

I will be making these for every holiday moving forward like Thanksgiving, Hanukkah, you name it. And on random dinner nights because they’re too good to only have a couple times a year. And we didn’t even dive into how EASY they are to make. You mix together a parmesan paste of sorts and add it to the baking dish. Then press down potatoes on top and add it all into the oven. It is a go-to for both flavor and how simple it is to whip up.

Tip: serve these with your favorite dipping sauce as a snack or appetizer as well as protein and veggies for a full meal.

What ingredients you need to make these Parmesan Potatoes:

  • Baby potatoes
  • Extra virgin olive oil
  • Grated parmesan cheese
  • Garlic powder, dried oregano and paprika

How to make crispy potatoes with parmesan: 

  1. Preheat oven to 400 degrees F and take out an 9″x13″ baking dish and grease with a little olive oil
  2. Mix parmesan mixture in a bowl
  3. Use a spoon to scatter the parmesan mixture evenly over baking dish
  4. Place potatoes cut side down, pressing firmly
  5. Optional: drizzle top of potatoes with a touch of oil or spray with oil, then sprinkle with salt.
  6. Bake potatoes for 35 – 40 minutes or until they are soft and the parmesan crust is golden
  7. Allow the potatoes to cool for a few then scoop up and enjoy with desired dipping sauces

Tips for success making Parmesan Potatoes:

  • These make for a great side dish or finger food to pass around at a party. Or eat solo in your kitchen like I do when I make them (I oddly love these leftover cold!)
  • Baby potatoes work best for these as you don’t want them to be too big! We are roasting smaller ones in the parmesan mixture and it’s easier to use smaller potatoes
  • You can really use any seasonings you want here. I love doing a mix of garlic powder, oregano, paprika and salt and pepper. But feel free to customize to your liking!
  • If you are reheating leftovers of these, they will be crispy again by warming over stovetop in a greased skillet or in the oven!

  • 1.5 lb baby potatoes , halved then cut lines in the flesh part like a grid (about 1 line vertically and 23 horizontally)
  • Extra virgin olive oil for drizzling

Parmesan mixture:

  • 1/2 teaspoon each, garlic powder, dried oregano and paprika

Notes

*Store leftovers in fridge for 5 days. Reheat in skillet, microwave or oven!
