We are going to have a lot of salsas coming your way I think since Jord is obsessed with making salsa. And because I have a hatred all things tomatoes – I am always looking for new ways to eat a salsa but not one filled with tomatoes (don’t hate me!).

This is the ultimate salsa recipe for all my tomatoes haters or for when you just want to spice things up a bit. My cucumber avocado salsa takes a whole 5 minutes to whip up and probably less than 5 minutes to devour. My 3 year old also loved it so much with his chips (anything with chips ha!) and it is an easy healthy snack to prep. Or serve as an appetizer when you have friends coming over.

I have a feeling I will be making this a lot when we entertain this summer too!

What ingredients you need to make this cucumber avocado salsa:

  • Cucumbers – seedless works best! You can use mini ones or large ones.
  • Avocado – a large ripe one! Not too ripe but soft enough to cut and enjoy.
  • Olive oil – just a little goes a long way here
  • Rice vinegar – a secret weapon in the kitchen. My MIL always uses this and we love it.
  • Scallions – use the green parts as a garnish of sorts.
  • Sesame seeds to garnish

  • When do you make this salsa? I love making it right before serving. It is super refreshing and because of the avocado, it tastes best if you make it fresh!
  • Can I make this a little spicy? Of course. Feel free to add in some chopped jalapeños if you want too.
  • What do you like to serve with this? I personally love a crunchy tortilla chip with it. It is a little salty crunch that taste so good and goes a long way. But you can use any chip you’d like.

  • 2 mini cucumbers or 1 large cucumber (seedless), cut into quarters
  • 1 ripe avocado, diced
  • 1/2 tablespoon olive oil
  • 1 tablespoon rice vinegar
  • 2 tablespoons chopped scallions (green part!)
  • Sesame seeds to garnish
  • Sea salt and black pepper to taste

Instructions

  1. Ingredients to a medium bowl and mix together
  2. Enjoy while fresh with your go-to chips or crackers
