And I love that it is gluten-free and nut-free and easy to whip up. Plus if you only want to eat one, just save the other one or freeze it. How to make gluten-free deep dish cookie skillets for two:

  1. Grease 2 ramekins with a little butter or oil
  2. In a medium bowl mix together butter, egg, coconut sugar and vanilla until smooth
  3. Mix oat four, baking soda until full combined
  4. Fold in dark chocolate chips then pour batter into ramekins and bake in oven at 350 degrees for 18-22 minutes (or until baked to your liking)
