INSANE Monster Cookie Brownie Pie!

At this point you guys know my obsession with all things monster cookies. We have made Monster Oatmeal Cookie BarsGluten-free Monster Cookies, and most recently these Gluten-free Monster Cookie Brownies. So you can only imagine how excited I was when I saw that Miss Jones Baking Co. launched a Monster Cookie Mix as a part of their Everyday Delicious line.

Their Monster Cookie Mix though is truly impressive and beyond anything I could have imagined in a baking mix. It is absolutely delicious and is made with their proprietary SmartSugar blend, which naturally reduces sugar by 50% without any sugar alcohols or artificial sweeteners.   It’s also made with 100% oats and is certified gluten-free. The mix itself is super easy to prepare and did I mention it comes with even more chocolate chips and candies too?! They make it super easy for us too. All you need to make them at home is creamy peanut butter, an egg and some softened butter (vegan butter works too!).

Now let’s talk more about this Monster Cookie Brownie PIE! Use the Monster Cookie Mix to make the crust and the Double Chocolate Fudgy Brownie Mix for the topping for the ultimate brookie type vibe (we all love a brookie!). How to make Monster Cookie Brownie Pie:

  1. Preheat oven to 350 degrees
  2. Grease a pie dish well (I used a 10-inch one but any works. It will just change bake time)
  3. Start by making the monster cookie layer. In a large bowl, cream together butter and peanut butter
  4. Add in the egg and mix together then add in cookie mix and mix until fully combined
  5. Add the dough to the pie dish and press down firming with your hands or spatula and form the dough into a pie shape. I also pushed it up against the edges
  6. Pop it in the oven for 5 or so minutes and start making the brownie mix
  7. Mix together eggs, oil and water until smooth then mix in brownie mix until fully combined
  8. Remove pie dish from oven and pour brownie batter on top (if you have too much, don’t over fill! Just add the remaining batter to a smaller baking dish and bake separately)
  9. Bake cookie brownie pie in oven for about 25 minutes (or until cooked to your liking. I like mine a little undercooked/fudgy)
  10. Allow the dish to cool a bit before cutting and enjoy!
