This One-Pot Skillet Lasagna is a delicious and healthy meal to make any night of the week. It’s a great 30-minute dish using all gluten-free ingredients and with the flavors or classic lasagna except half the effort and time is involved.

You know me and my obsession with 30 minute meals. So when it’s a 30 minute meal that is also made in one pot – you bet I obsess over it. This is the ultimate family weeknight dinner recipe to make. It comes together easily, doesn’t dirty up the entire kitchen. And it makes for delicious leftovers the next day (if you have any!).

I love that you can use any ground meat you want for this too. I usually like to use sausage because of the flavor it adds. And there is just something about sausage in pasta that is just beyond delicious. But you can also use ground chicken, turkey or beef too. 

You’ll notice that I use cottage cheese for this recipe instead of ricotta cheese. I prefer this for a higher protein option over ricotta cheese. But you can also use ricotta cheese if you prefer over cottage cheese.

If you want to make this meal vegetarian, then omit the meat and feel free to add in your favorite veggies or something instead. You can also use mock meat if you prefer too.

What ingredients you need to make Skillet Lasagna:

  • Meat of choice (I usually use sausage, beef, turkey or chicken)
  • Garlic cloves – minced garlic cloves are so good in this dish! If you don’t have any then add garlic powder to the pasta
  • Olive oil – I usually use extra virgin olive oil
  • Gluten-free farfalle pasta – or another small shaped pasta sthat you prefer
  • Marinara sauce of choice – use any tomato sauce that you prefer
  • Chicken or beef broth (or water but I prefer broth for flavor and nutrients)
  • Cottage cheese – or use ricotta cheese if you want
  • Mozzarella cheese – you can buy pre-shredded cheese or shred the mozzarella cheese yourself. I usually do it myself because pre-shredded cheese doesn’t melt as well in my opinion 
  • Sprinkle of parmesan cheese and chopped basil  – I usually like to add this on top for serving

How to make easy Skillet Lasagna:

  1. In a large skillet, warm oil over medium heat and add garlic to sauté for 2-3 minutes
  2. Add in the ground meat of choice (feel free to add any spices if you want) then cook until meat is browned and cooked through (use wooden spatula to get into smaller pieces
  3. If meat is oily, strain any excess fat or oil then pour tomato sauce, broth and pasta noodles to skillet and stir to combine
  4. Cover with a lid and bring to a boil then simmer and reduce heat for 14-15 minutes or until noodles are cooked through
  5. Remove from heat and stir in cottage cheese and mozzarella cheese

  • What kind of meat works best for this recipe? Really any ground meat works for this. I love using ground sausage, chicken, beef or even turkey works.
  • Can I use another type of pasta? Yes! Any small-shaped pasta can work or even broken up lasagna noodles.
  • Can I add vegetables to this? Absolutely. You can add in some chopped mushrooms, zucchini, spinach or broccoli if you want. I do recommend cooking the broccoli before hand if using.
  • What is the best way to reheat this? In microwave or stovetop with a splash of water, broth or more sauce.
