The Best Ever White Chicken Chili Recipe

What is it about the winter time that makes us all crave endless amounts of chili recipes. Assuming the freezing temps and all that, but as soon a winter hits – boom we are on a chili rotation over here.

I have shared a few different chili recipes in the past on the blog and they are always a hit with you guys. This one though switches things up a bit. Because we are making a white chili – AKA no red tomatoes are involved. This is one of Jordan’s favorite types of chili and it is so easy to make too. All you need is one large pot, a few ingredients and you are all set.

I love that this white chicken chili is also filled with beans, corn and I top it off with some shredded cheese (you can use dairy-free too!) and cilantro. Plus lots and lots of chips for serving. The best part of chili in my opinion is having extra chips or toasted bread to go with it. I love the added crunch and carbs – ya feel me?!

The Best Ever White Chicken Chili Recipe

What ingredients you need to make the best healthy white chicken chili recipe:

  • Olive oil
  • Garlic
  • Onion
  • Ground chicken
  • Chicken bone broth
  • Diced green chiles
  • Cumin, paprika, chili powder
  • Sea salt and black pepper
  • Canned corn or use frozen/fresh corn
  • Cannelleni beans
  • Cilantro, cheese and chips for topping/serving

How to make and store gluten-free white chicken chili:

  1. Heat a large pot with the oil, garlic and onion and cook over medium heat for 5 minutes or so
  2. Add the ground chicken and break up with a fork so it cooks in smaller pieces
  3. Cook the chicken over medium heat for about 5-7 minutes (or until there’s no pink)
  4. Add in broth, chiles and spices and stir together and bring to a boil
  5. Lower to a a simmer then add in corn and beans and allow the chili to simmer for about 15 more minutes then serve while warm
  6. I add some chips, cheese and cilantro to mine! I love these organic “frito” ones
  7. Store leftovers in fridge for 5 days or freezer for a couple months. I reheat on stovetop or microwave.
